Spicy Cauliflower "Rice" Salad

Ingredients:
1 head cauliflower (1.1kg, 2.4lb)
2 carrots (120g, 4oz)
1 red pepper/capsicum (170g, 6oz)
1 teaspoon ground coriander seeds
1-2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
90mL (3oz) extra virgin olive oil
1 teaspoon sea salt

Method:
- Process cauliflower in food processor, into fine pieces that resemble rice
- Add grated carrot and finely chopped capsicum
- Add oil and seasonings and mix well

Serves 6

160 cals
12 g fat
5 g protein
6 g carbs
