My Take On Moroccan Inspired Chicken Tagine with Chermoula, Saffron & Preserved Lemon

This is one of those slow-cooked dishes that fills the whole house with warmth much needed in winter .

Tender braised chicken, silky potatoes, saffron, olives and preserved lemon all simmered together until rich and deeply fragrant.

Best eaten straight from the pot with crusty bread or fluffy couscous but I’ve chosen sticky honey harissa roast carrots! 

INGREDIENTS

The Tagine:
• 1.2 Kg Whole Chicken, Cut Into Pieces, Skin On
• 80 Ml Olive Oil
• ¾ Tsp Ground Cumin
• ¾ Tsp Ground Ginger
• 4 Garlic Cloves, Sliced
• 1 Brown Onion, Finely Sliced
• 10 Cm Cinnamon Quill
• 1 Large Tomato, Chopped
• ½ Cup Parsley, Chopped
• ½ Cup Coriander, Chopped
• Large Bunch Coriander Stems
• 4 Kipfler Potatoes, Halved
• 150 G Green Olives
• 1 Continental Chicken Stock Jelly Cube
• 2 Cups Boiling Water
• Juice Of ½ Lemon
• Few Saffron Threads, Crushed And Melted With An Ice Cube

Chermoula Paste:
• ½ Tbsp Dried Chilli Flakes
• ½ Tbsp Sweet Paprika
• ¾ Tbsp Ground Cumin
• 1 Tsp Salt
• 3 Tbsp Flat-Leaf Parsley, Chopped
• 1 Tsp Chopped Ginger
• 1 Tbsp Garlic Paste
• ½ Cup Coriander Leaves
• 1 Brown Onion, Finely Diced
• 1 Preserved Lemon
• 125 Ml Olive Oil

Garnish:
• Chopped Coriander
• Preserved Lemon Slices

A few days ago I hosted the Flavours of Karnataka & Surrounds event , and it was spectacular !

From the vibrant group of guests , to the prized Australian seafood / produce & the bold evocative flavours known to this southern region.

Together as one foodie family we cooked these heritage dishes:
* Stuffed Baby Eggplants in Sesame Tamarind Roasted Coconut Gravy
* Jumbo Prawns Braised in Coconut
* Nana’s Red Chicken Fry & Potatoes
* Tangy Green Mango Dahl
* Ghee Rice Pilaf w/ Cashews

At its heart lies coconut & tamarind two omnipresent ingredients woven seamlessly into its dishes from the most refined vegetarian delicacies to richly layered meat & seafood fare.

The state’s remarkable diversity is shaped by its physiography spanning the coastal plains, mist-laced hill ranges, and the fertile black-soil tracts.

I was introduced to this beautiful tea just a few months ago… and I haven’t stopped drinking it since.

The Divine Origins ‘Yiwu Mountain Tea’ - a highly prized from Yunnan China- is unlike anything I’ve experienced. Grown from ancient, old-growth trees (some up to 1300 years old) at high altitudes, its profile is exceptionally soft, sweet, and floral… with the most lingering honeyed finish that gently stays with you.

As someone known as the Spice Queen, it feels only fitting that I’ve fallen for the “Queen” of teas hehe 🤍

What I love most is how it transforms my evenings - light, calming, almost meditative. It carries a delicate malty note reminiscent of Assam, yet far more refined, with a deep, gentle sweetness that makes every sip feel intentional.

Every single weekend sacrificed, the long laborious hours layered on top of a full corporate life, the relentless effort poured into creating something truly one-of-a-kind… it all becomes worth it in moments like this.

Reading your words, knowing that your perception of Indian food has shifted ... that the veil of stereotype has been lifted - is everything to me.

To witness the cuisine of my country India finally being experienced in its purest form… fresh, elevated, sensationally nourishing, and so much more than what it’s often reduced to… fills me with an indescribable pride.
