The recent seismic shift in the US dietary guidelines is not just a bureaucratic update. It is a retraction. It is the sound of the nutritional establishment finally admitting that while they were obsessing over cholesterol, they were letting the real killers walk through the front door. We got fatter. We got sicker. We traded our vitality for a low-fat slogan, and the bill has finally come due.

There will likely be no official apology. Institutions rarely admit that their advice helped hospitalise a generation. But the silence of the retraction speaks volumes. After billions of dollars in research and endless committees, we have arrived at a truth that would have been obvious to a farmhand in 1850.

Real food heals. Fake food kills.

The deception is over, but the damage remains. For some, the metabolic cost of the low-fat era is permanent. But for the rest of us, it is not too late to reverse the decay. The grey aesthetic of deprivation is dead. You can have the cream. You can eat the skin. It feels like a rebellion, but it is simply a return to sanity. The war on fat was a mistake. The peace treaty has been signed.
