Offset Master Class - What You’ll Learn:

Setup and Fire Management: Work in small groups with me to master the setup, lighting, and fire management techniques of an offset smoker.

Brisket: Each group cooks its own brisket while I demo one on the Pellet Grill.

Other Meats : Hands on trimming, seasoning and cooking Brisket, Pork Ribs, Sausage and our famous smoked Cheeseburger.

Smoking Techniques: Gain insights into various wrapping techniques, key indicators of a perfectly cooked brisket, and much more!

Insta didn’t post any video’s to FB on the lead up to this video. So without the last week of hype, here is my how to smash burger.

Preparation is key!

Set up all the buns with sauce and pickles before you smash a single patty.

Ball up 70g Patty’s of 20-30% fatty mince.

Prep your cheese so you can get it on fast.

Drop 4-6 Pattie’s at a time, press down hard with the smasher and twist back and forward at the end until the meat presses out under the smasher.

Count to 3 to let the steam and fat lift the smasher off the meat. Twist, lift and slide off and up in one go.

Salt

Flip by pushing hard into the BBQ plate and running around the edges of the patty until you can get under and flip. Don’t leave any of the crispy meat on the plate as that’s wasted flavour.

Add Cheese, cook for 30sec, stack and move to prepared buns.

Boom best burger you have ever had.

From here add extra s**t if you like - onion, bacon, whatever’s .

If you haven’t seen my stories lately please note this will be my last popup at the factory as I’m moving out at the end of October.

It’s been great hacking it for the pop ups and education but with the costs of everything these days it’s hard to justify the expense.

Smoke School will be moving home and the pop ups will take a break while I sort out a plan.
