This is our very first social media post for The Travelling Kitchen. And today is our last post as we close this kitchen. All the way back in 2013, this beautiful blue eyed boy, helped me come up with a bright idea to bring cooking to life for kids. And so I embarked, with a little idea, a couple of staff, a lot of nervous passion, to slowly bring to life The Travelling Kitchen. In just under 10 years, we have cooked with thousands and thousands of children at hundreds of schools, kindergartens, creches, festivals, school holiday programs and birthday parties. We have created some super munchin memories, and I hope that these first cooking experiences for children, will remain a special memory in their heart. I have had amazing employees, some who remain to be close friends. I have had the most unconditional support from my husband, children and family, in tricky times holding me up and keeping me going. Thank you my beautiful family and thank you to my Mum and Dad who taught me the virtue of hard work and taught me to believe in myself and take a chance. Thank you to all our supporters and followers, we hope you have enjoyed the travels with us and we hope your children continue to create munchin memories with you in the years to come. In good health, with much love and deep gratitude, Karen

Gnocchi are soft pillowy dumplings and many variations exist. The name comes from the Italian word for knuckles - nocche. Strangolapreti is what they're called when served in tomato sauce. It means priest stranglers, named so because a priest enjoyed them so much he ate them too fast and choked on them.
What better way is there to warm up than with a nice bowl.
Combine in a large bowl
2 1/2 cups ricotta cheese
1 cup semolina
1 cup plain flour
1 cup baby spinach 🍃, chopped
Knead gently until dough just forms. Roll into logs, finger thickness. Cut into small pillows (~2cm). Cook in boiling water - ready when they float to the top. Serve with tomato 🍅 sauce and don't eat them too fast ⚠. Buon apetito.

Flija, also known as fli or flia, is a traditional dish of KOSOVO 🇽🇰 cuisine. It consists of multiple crêpe-like layers of two batters. Traditionally, it is cooked outside near a campfire using a special lid covered in charcoal, which is actually what cooks it. You can also use a frying pan. Time consuming but totally worth it.
In a large bowl whisk together until lump free
5 cups wholemeal plain flour
5 eggs 🥚
2 tsp salt 🧂
3 1/4 cups milk (1/2 cup extra if needed)
In another large bowl whisk together until lump free
127g sour cream
1 cup plain kefir
113g butter, melted
Leave for 1 hour or overnight. Adjust consistency if needed - should be somewhere between crepe and pancake batter.
Cook egg batter first as you would crepes, adding a layer of sour cream batter on top. Flip and alternate batters, flipping between each cook until all batters is used up. Once done, cut into wedges and serve with honey 🍯.

Good levels of VITAMIN D boost immune health and regulate CALCIUM in our blood - important in maintaining healthy bones and muscles. We absorb 90% by skin exposure to sunshine 😎🌞 combined with exercise. In winter approximately 20-30 minutes daily, between 10am-3pm is required for adequate absorption. This is not always achievable and around 25% of Australians are deficient. Some symptoms that you aren't getting enough MAY include muscle 💪 pain, weakness or cramps, fatigue, restless sleep, poor concentration and headaches. Including vitamin D food sources may help boost levels - fatty fish 🐟 (salmon, mackerel, tuna), egg yolks 🍳, 🐄 beef liver (natural sources); some milks, orange juices and breakfast cereals (fortified).

There’s nothing I like more than a one-pot, nourishing, hug in a bowl . Take those from the crisper before they get too sad and whip them into a bowl of 😋.
Fun fact...earliest evidence for soup dates back to 6000BC 😲 where they enjoyed a nice bowl of...Hippopotamus Soup 🥣🤐. I'll stick to thanks.

for anyone? I'm talking fried Halloumi cheese, roasted tomatoes 🍅, poached eggs 🥚, salad leaves 🍃, za’atar pita and a little spicy harissa to bring it all together. This combination of flavors and textures works deliciously together 😋🤤.

How much do we all love the humble potato 🥔? Mash it, chip it 🍟, roast it, bake it, boil it! Soup 🥣, curry 🥘, salad, gnocchi.
All that and more from one simple vegetable 😲😋🤤
How do you yours?
