There’s something special about jalapeños…
Bright, fiery, full of personality — the kind of ingredient that brings a dish to life with just one bite.
Here at Cooked from Scratch, we love taking simple produce and turning it into something extraordinary, and right now our kitchen smells of that fresh chilli heat and tangy fermenting goodness that only jalapeños can bring.

These beauties are perfect on tacos, burgers, toasties, roast meats, flatbreads, grazing boards — honestly, they end up on everything around here. And the best part? With a little salt, time, and magic, you can ferment them at home and enjoy that lively flavour for months.

🌶️ How to Make Fermented Jalapeños
A simple, delicious ferment for your kitchen
Ingredients
Fresh jalapeños – 500g
Non-iodised salt – 15g (3% brine)
Filtered water – enough to cover
2 garlic cloves, lightly crushed (optional)
A few peppercorns or coriander seeds (optional)

Method
Slice the jalapeños into rings and pack them tightly into a clean jar. Add garlic or spices if using.
Dissolve the salt in filtered water to create a 3% brine, then pour it over the jalapeños so they’re fully submerged.
Place a fermentation weight on top (or use a small clean jar) to keep them under the brine.
Loosely seal the jar so gases can escape and leave it at room temperature for 5–10 days.
Burp the jar daily or use as we have a fermentation jar that does the job for you and taste from day 5 — once they’re tangy, vibrant, and a little fizzy, move them to the fridge.

They’ll continue developing flavour and will keep for months refrigerated.

How to Use Them
Layer onto burgers and grilled sandwiches
Scatter over nachos or tacos
Chop into dips or spreads
Add to flatbread toppings
Make into a hot sauce
Fold into scrambled eggs or shakshuka
Serve with your fermented chilli sauces for a flavour duo

A Little Christmas Magic in the Cooking School…

If you’ve been following us for a while, you’ll know we love our traditions here at Sabo’s on Severn and Cooked from Scratch — and one of our absolute favourites each year is the Gewürzhaus Swedish Inspired Spice Advent Box

We’ve bought it for the last couple of years and honestly… it brings me so much joy.
Every. Single. Day. For the month of December
A tiny door, a gorgeous little spice, and a burst of inspiration for the kitchen.

This year’s box is absolutely beautiful (you’ll see in the photos!) — the colours, the packaging, the thought behind every single packet, with a great recipe using the spice included. It’s such a fun way to count down to Christmas, especially for anyone who loves cooking, flavour, and a bit of festive magic.

We’re not selling it — just sharing the things we truly love.
And this one? It’s a keeper.
We’ll be opening ours here at the cooking school throughout December, adding little sparks of flavour to classes, dishes and maybe even inspiring some new recipes along the way.

It’s been a little quiet from me lately, and I’ve missed you all.
Much like this peaceful angel, things have been quiet on the outside… but behind the scenes, so much has been happening. Big dreams, big foundations, and a whole lot of heart going into the next chapter of our family accommodation and cooking school business.

We’ve been flat out building something truly special — and there are so many exciting things coming to Sabo’s on Severn & Cooked from Scratch in 2026!

But it’s time to get back to what lights me up, what makes me happy, and what made me leave a job in the city… cooking, creating, teaching, sharing, and welcoming beautiful guests through our doors again.

And with the Granite Belt’s orchards, farms and vineyards about to burst with fresh local flavors, I can’t wait to start cooking again.

So let’s jump back in!
