Fifty five years this weekend since I started my apprenticeship in Canberra - what a journey!!

Dinner tonight
- Grilled half cos x 2 in olive oil - take out.
- add more olive oil, crushed garlic, drained chickpeas, slivered almonds + splash of lime juice and balsamic glaze.
- finish with fresh herbs from the garden - mint, parsley and Thai basil - pour over cos. Garnish with pomegranate seeds and goats feta.
Grill the salmon fillets, three minutes each side and serve.
Took me 15 minutes from start to finish.

All done and dusted - our last class in the school making Gingerbread Houses. Thank you Kate, Anja, Carol and Chris for making the day so special 👨🍳 Thank you also to the 7,000+ that have come to the school over the past twelve years and helped us become one the most successful cooking schools in Melbourne. Wishing everyone a wonderful Christmas and a very special 2024 - Garry 👨🍳

Awesome group of friends in the school on Saturday. Prawn ravioli with bisque sauce , Thai red curry chicken with basmati rice and chocolate soufflé with vanilla bean ice cream. We have had some great days over the past twelve years but this one was up there with the best
