One of the highlights of my try to FNQ has been visiting Rozana Wright at Spice Z. Hers is a small family business selling beautiful Sri Lankan curry and spice products spicez.com.au It was great to see their beautiful tropical garden, hand built house and the kitchen and store room where all the action happens. It was also very exciting to see Vanilla and Dragon fruit growing in the garden. The scent of curry leaves took me back to the year I spent in India. I was rather taken by the size of the curry tree, mine in Melbourne is only as big as my hand.

Preserved lemons beyond Tajne! I haven't posted in a while as I've been busy with the less culinary arts but right now I'm stringing deliciously scented cardamon seeds from the queen of spices in Kuranda Far Nort Queensland who has asked for my recipe for Indian fermented lemons. Well, I can guarantee this recipe from Hank Shaw, it's a ripper. Give it a go and serve it with curries!

Here's a pic of the bread we made in my Artisinal Sourdough workshop today. It's made with 100% organic, wholemeal flour from Terra Madre. I'm happy with the rise. This is a 24 hour, overnight sourdough, well worth the wait.

I'm very happy with the crumb and moistness of this latest loaf. With this loaf, I experimented with much higher hydration (more water). It was a very sticky dough. The secret to getting a big rise, with lots of bubbly air holes, is partly about having a wetter dough, stretching rather than kneading and shaping using paddles. Thanks to "freecycle' all the lemons in my upcoming fermented and preserved lemons workshop are all local and organic. good old "freecycle." There are still a few places left in the classes at North Fitzroy and Sunbury.
