Our one-off holiday cooking classes are back, and this time we’re bringing back some of the most-loved recipes from term 2 for a special “Best of Sticky Fingers” menu. *We also have classes for the Deaf Community, Auslan communication support provided.

These classes are the perfect chance to try Sticky Fingers Kitchen for the first time, learn practical everyday cooking skills, meet new people, and enjoy some seriously yummy food along the way.

This week in the Sticky Fingers Kitchen, we swapped traditional recipes for some viral food trends that have been taking over social media.

On the menu:

• Bánh mì smashed tacos
• Dubai chocolate date bark

One of the things we love most about cooking is exploring new ideas and being willing to try something different. Sometimes the trends are worth the hype, and sometimes they surprise us!

Our student chefs had a great time experimenting with new flavours, textures and combinations while putting these internet-famous recipes to the test.

To top it all off, we also celebrated Mary's birthday, making it a very special week in the kitchen.

What should you cook on your next camping trip?

With the dry season in full swing and school holidays just around the corner, many Territorians are packing up the caravan, camper trailer or swag and heading off on an adventure.

The good news? Camping meals don't need to be complicated to be delicious.

Some of our favourite camping meal ideas include:
• Foil pack meals filled with your favourite meat and vegetables
• Simple skewers cooked on the barbecue
• One-pan breakfasts with minimal washing up
• Campfire nachos
• Loaded baked potatoes
• One-pot pasta dinners
• And of course, toasted marshmallows around the campfire

As well as cooking, our student chefs learned about the King’s Birthday, why it is celebrated in Australia, and some of the traditions associated with the occasion.

A great week of learning, cooking and enjoying some delicious food together.

Next week​ (8th of June) is the King’s Birthday public holiday in Darwin and the
Northern Territory, celebrated on Monday, June 8, and we’ll be using it as a little inspiration for our menu. Check back next week to see what we create.

Fun fact: Did you know King Charles actually has two birthdays? While King Charles III was born on November 14, his official birthday is celebrated in June and the reason is simple… the weather.

Back in the UK, royal celebrations are held outdoors with parades, horses, musicians and military displays, so June was chosen for a better chance of sunshine instead of rain.

Even more interesting, Australia celebrates the King’s Birthday on different dates depending on the state or territory.

Here in Australia, the King’s Birthday public holiday is celebrated on different dates depending on the state or territory. Most celebrate it on the second Monday in June, while Queensland marks it in October and Western Australia has its own separate date as well.

Did you know you don't need a pasta machine to make fresh pasta?

Last week, our student chefs made Fettuccine Amatriciana completely from scratch, learning how to mix, knead, roll and cut their own fresh pasta by hand.

On the menu:

• Italian biscotti with orange and dark chocolate (a delicious jaffa-inspired flavour)

Our student chefs learned that you don’t need fancy equipment or pasta machines to make fresh pasta at home. From mixing and kneading the dough to rolling and cutting the pasta by hand, there were plenty of new skills to master.

It was a week full of patience, teamwork, and learning new techniques, and the results were well worth the effort.
