Food Scientists apply Texture Analysis and Viscometry to assess the quality of the product and to ensure reproducibility. The measurable textural attributes include firmness, crunchiness, cohesiveness, stringiness, and adhesiveness among others. They also use Texture Analysis to assess the integrity of packaging materials. Rheological studies are used to assess the flow profile and consistency of the fluids. Ketchup for instance should have a set strength high enough to resist dripping off your chips (behave more like a solid when at rest) but when shaken out of the bottle should break down rapidly in structure allowing you to squeeze it onto a surface (behave like a liquid under forced motion). A lot of pastes and liquids show different solid-like and liquid-like behavior patterns depending on the network of forces created within the product to create a stable gel structure and also due to the level of stress or forces imposed on them.
