Go on enter your honey at the Honey Festival on the 28th May. Entry forms can be found at BICWA website. The bees are wonderful at transforming watery nectar from flowers into thick honey. They mix them with enzymes and they reduce the water content by dividing it into small droplets and fanning their wings to reduce the water concentration. Good honey water content is around 18%, anything over 20% causes to fermentation.

Today the pollinators like white, we have the native paperbark, grevillea and Marri gum, all producing some nectar. Autumn in SW Australia brings damp mornings and the bees are busy building winter stores. The native flora really helps the pollinators get through the winter months, so please leave some frames on for the colonies to see them through.
