Fun with greens rainbow lunch
One of my favourite Thermomix benefits is the creative dressings
70g each pickled ginger and macadamia oil, 20 g sesame oil, 1g wasabi, salt and pepper and some mint blended on speed 9 until smooth and delightful

Fun with Greens #6
Just wow. Don’t usually brag but I am on 🔥 with this one
Broccoli stalks 1 second speed 5, add rest of broccoli reverse speed 4.5 2-3seconds
Cook varoma reverse speed soft with lug of olive oil and 3 punches if salt and garlic
Or air fry for 13 minutes with pepitas for last 8 mins
Chop spring onion and apple while the cooking is happening
Mix together and heavenly!
I did add Flavourista Italiano herb mix to the broccoli before the airfry

Keeping it simple
Greening up fried rice
Love quick veggie chop in the Thermie but first I whizzed 3 handfuls of herbs then added two handfuls of baby spinach for 2 seconds speed 5
Added this green at the end
Delicious!!

Keeping it simple
Adding chopped iceberg and snow peas, pickles and avocado to my sons wrap

Green Fun #2
Green salad - sensational!!
Strongly recommend as a side with salmon or on its own to feel like spring is about to sprung.
Dressing:
1/4 C cashews - tip 2 Tbs lemon juice or apple cider vinegar over the top.
1/2 avocado
MC water - see method
Seasoning (I used my friends souly guacamole mix - special) I suggest salt and pepper and garlic powder
EVOO
Salad
Big handful of rocket and baby spinach
Herbs
1 C peas
Optional green beans
Optional pepitas
Optional olives
Method:
Put rocket in salad bowl.
Chop herbs - locked lid, turbo x 2.
Scrape into salad bowl - leaving some in thermie for flavour.
Get 250g water heating in the thermie - 5 mins Varoma speed 1.
In the meantime get out your remaining ingredients and chop your beans
Add the frozen peas to the Thermomix. Cook reverse, Varoma temp, 2 mins speed soft.
Add the beans, stir on reverse 1 minute, speed soft.
Remove lid, insert basket and pour off 1 MC of the water.
Strain the rest then place beans and peas in basket and rinse with cold water.
Tip water and cashews back into thermie, cook on 80 degrees, 2 minutes speed 2.
Add avocado, 3T EVOO and seasoning. Blend speed 7 for 10 seconds. Scrape down and adjust consistency with water or olive oil if it’s too thick, then blend 30 sec speed 9.
Pour off some of the dressing for your next salad, keeping a good covering in the Thermomix bowl.
Let cool for a minute while you chop olives or toast your pepitas.
Put baby spinach in the bowl and chop 1 second speed 5
Repeat if necessary.
Add the beans and peas and stir on reverse, speed 1, 3 seconds.
Scrape into the salad bowl over the rocket and herbs and stir through with optional extras.

Green Fun #1
Morning smoothie
3 handfuls of lovely leaves, EVOO
Blended for 30 seconds speed 9 with 1/2 cup water or the pear
Add 1/2 tray ice
Blend speed 9, 30-50 seconds
Tips - a pinch of vitamin C powder if you like your mint to stay bright
And
1/4 cup of seeds for feeling fuller and for a creamier texture
