🐛🦋🌱Spring has arrived!! 🐞🪻
There are signs everywhere that spring is definitely here.
I've attached some photos that I shot a few days ago just around the house of what spring looks like at Mount Glorious. The citrus trees are in blossom, the avocado is thriving, the native orchids are going gang busters, the staghorns are looking amazing, and the danger noodles are on the move! 🐍🐍

🥬 This recipe – which includes this week’s food of the week, walnuts – makes two heaped servings as a main dish salad or four side dishes.

It’s light, satisfying, and is a TERRIFIC make-ahead lunch.

✅TIP: You can easily leave out the chicken to turn this into a vegetarian meal.

🍓Chicken & Spinach Salad with Walnuts & Goat Cheese 🍓
(2 main dishes, 4 side dish servings)

● 1½ Tbsp extra-virgin olive oil
● 1 Tbsp balsamic vinegar
● ¼ tsp sea salt
● ¼ tsp ground pepper
● 1 Tbsp finely chopped red onion
● 6 cups (180 grams) baby spinach
● 6 oz. (170 grams) cooked, shredded chicken
● 1 cup (140 grams) sliced strawberries
● ¼ cup (60 grams) goat cheese crumbles
● ¼ cup (30 grams) toasted chopped walnuts

In a large bowl, whisk together the oil, vinegar, salt, and pepper. Mix the onion into the dressing. Add the rest of the ingredients and toss well to coat.

Serve and enjoy!

🔑THURSDAY TIP

I have a TIP for you if you aren’t a fan of posting selfies on social media.

You can still keep a great photo record of your fitness journey by snapping pics and saving them to your phone.

You can even add a caption to your photos in your app.

On an iPhone, simply slide the photo up and add the caption.
On an Android phone, tap the photo and then click the info button, which will let you add a description.

It’s fun to go back and review your progress.

🎁It’s sweet… spicy… salty… and best of all... BACON-Y!

You might wonder why it’s called Million Dollar Bacon. Once you make it, you’ll understand exactly why.

✅TIP: Place wire racks on your baking sheet so the fat can drain off the bacon as it cooks. This will give you crispy strips and cut down on draining time.

🥓Million Dollar Bacon 🥓
(makes 6-8 servings)

● 1 lb. (450 g) strips of thick-cut bacon
● ¼ cup (50 g) coconut or brown sugar
● ½ tsp freshly ground black pepper
● ¼ tsp cayenne pepper
● 2 tsp chilli flakes

Preheat your oven to 350ºF/180ºC. Prepare a 13x9 (33x23 cm) baking sheet by covering it with parchment paper.
Optional: Place wire racks on the covered sheets. Set aside.

In a medium bowl, combine the sugar and black & cayenne pepper. Dip the bacon strips in the mixture until they are coated on both sides and place on the baking sheet (or wire rack).

Bake for 15 minutes. Using tongs or a fork, carefully flip the bacon over and cook for another 15-20 minutes until it reaches your desired crispiness. Thinner bacon slices = less baking time.

Drain and enjoy! (Disclaimer: at no point am I claiming that this is healthy)

🥓For a lot of people, BACON seems to be a food group all of its own …
because it’s salty, crunchy, and delicious! (did I just hear cries of nom nom nom??)

BUT does it have a place in a healthy diet?

😍Experts say yes – in moderation! (Moderation is because bacon is 68% fat.)

But here’s the good news. Half of this fat is monounsaturated and is made mainly of oleic fatty acids … which are the same fatty acids that make olive oil so good for your heart.

👉Bacon is also loaded with B vitamins and contains minerals like selenium and phosphorus, along with trace amounts of iron, magnesium, potassium, and zinc.

You can eat it as-is, in recipes, as a salad topper – the sky's the limit.
