With any profession, it’s always good to learn new stuff and upskill… and that’s exactly what I’ve been doing down in Brisbane over these past few days.

🗣 I can now sprout that I am a fully fledged Rehab Trainer..Yay!

How do you fuel your body? Whenever you do a good hard workout, it’s so important to put back vital nutrients that youve lost duration perspiration.

This is what I had after my workout this morning…. Chocolate Protein pancakes with Greek yoghurt, fresh berries, crushed almonds and a drizzle of sugar free maple syrup. Great balance of protein, carbs and fats… a d did I mention yummy!!

Following on from my cooking demo of the mountain bread lasagna… I have to say it was a hit….not only for me but the kids too!! Winning 🙌🏻They couldn’t tell the difference between this one and the “normal” lasagna I normally make… So here’s the recipe…..🍽
Ingredients…
*500 grams extra lean beef mince
*1 tsp garlic finely chopped
*1 medium zucchini (grated)
*2 cups spinach, roughly chopped
*1 medium carrot (grated)
*1 tsp italian mixed herbs
*1 tsp extra virgin olive oil
*2 cans whole peeled tomatoes
*2 tbls tomato paste
*1 brown onion finely diced
*375g tub light ricotta
*4-5 wholemeal mountain bread wraps
*1/2cup mozzarella light grated cheese

Here’s what you do 👇🏼
*Preheat oven to 200C. �*Sautee onion and garlic in the oil on medium heat.
*Add mince, cook until mince is brown and completely cooked through, ensuring there are no lumps. � * Add zucchini, carrot and spinach and season with salt,pepper and Italian herbs.
*Add cans of tomatoes and tomato paste and stir through.
*Simmer for 15-20mins on low heat.
*In an oven proof dish place a thin layer of meat to cover the bottom, then cover with 1 layer of Mountain Bread. Cover mountain bread with thin layer of ricotta.
* Continue to layer in that order, finishing with layer of ricotta and sprinkle grated cheese on top.
* Place in oven and cook for 35-40mins or until cheese melted and looks brown on top.

Seriously delish and a great healthy alternative.

Cals-253; Protein 29g; Fat 10g; Carbs 29.1g
