Beans and mushroom soup, easy and tasty!
I have used canned borlotti beans and portobello mushroom, some celery, carrots, garlic and parsley.
Sauté a clove of garlic in a couple of tablespoons of extra virgin olive oil, together with chopped carrot and celery.
Add the mushrooms and some water and simmer for about 20 minutes.
Blend 3/4 of the beans, add them to the mushrooms and cook for other 10 minutes.
Finish with fresh parsley, black pepper and a drizzle of extra virgin olive oil.

There are some ingredients that I always have on hands: capers, kalamata olives, anchovies, tuna, tomato paste, dried herbs...a few of these items, combined with some good extra virgin olive oil, garlic or fresh herbs can make your belly happy in a bunch of minutes!

Green butterfly 🦋
I have dressed my farfalle pasta with a light mint and parsley pesto 💚 super!
If you want to make it, simply blend 50gr of parsley together with an handful of fresh mint, 20gr of cashews nuts, 3 tbsp of extra virgin olive oil and some salt to taste.
TIP: if your pesto is too dense, instead of adding extra oil, I suggest you to pour a few table spoons of pasta water

Buon giorno! How are you guys?
Many of you liked my pumpkin gnocchi 🙏🏽 So here is my recipe for you!
For 2 portions you will need 500gr of cleaned pumpkin (I have used butternut) and about 150gr of plain flour.
Dice your pumpkin in small cubes (about 3, 4cm), place it on a baking tray and bake it at 200° for about 30 min (or until tender).
Let it cool down a little bit and mash it very well using a fork. When the compost is smooth you can add the flour and mix to combine.
Bring a small amount of dough at the time and shape your gnocchi, adding some extra flour if needed, just keep in mind that the more flour you add, the less tender they will be!
