Grilled Chicken and Vegetable Skewers 👌😋

Ingredients:

• 4 boneless, skinless chicken breasts cubes
• 1 red bell pepper, cut into large pieces
• 1 onion, cut into large pieces
• 2 gloves garlic minced
• 2 zucchini, cut into slices
• 2 cherry tomatoes, halved
• 2 tablespoons of olive oil
• 1 teaspoon of salt
• 1/2 teaspoon of black pepper
• 1/4 teaspoon of paprika

Instructions:

1. Preheat the grill to medium-high heat
2. Thread the chicken, bell peppers, onions, garlic, zucchini and cherry tomatoes onto skewers
3. Brush with olive oil and season with salt, black pepper and paprika
4. Grill for 10-12 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender
5. Serve hot and enjoy!

Friday's Special: Garlic Shrimp Pasta🤗

Ingredients:

• Pasta (linguine or fettucine)
• 1 pound large shrimp, peeled and deveined
• 3 cloves garlic, minced
• 2 tablespoons olive oil
• 1/4 white wine (optional)
• 1/4 cup chopped fresh parsley
• Salt and pepper
• Grated parmesan cheese (optional)

Instructions:

1. Cook pasta till cooked, then set aside
2. In a large skillet, heat olive oil and sauté garlic until fragrant
3. Add shrimp and cook until pink, about 2-3 per side
4. Add white wine (if using) and simmer for 1 minute
5. Combine cooked pasta, shrimp mixture and parsley. Season with salt and pepper
6. Serve hot, topped with parmesan cheese if desired

Bobotie, South African Dish😋

Ingredients:

• 1 pound ground beef or lamb
• 1 onion, chopped
• 2 cloves of garlic, minced
• 1 cup dried fruit (raisins, currants or cranberries)
• 1 cup breadcrumbs
• 1 egg
• 1/2 cup milk
• 2 tablespoons curry powder
• 1 teaspoon turmeric
• Salt and pepper to taste
• 2 tablespoons vegetable oil
• 1 cup chutney (optional)

Instructions:

1. Preheat oven to 180° C
2. Cook the ground meat until browned, breaking it up into small pieces
3. Add onions, garlic, curry powder, turmeric, salt and pepper. Cook until the onions are soft
4. Stir in dried fruit, breadcrumbs, eggs and milk. Mix well
5. Transfer the mixer in to a baking dish and top it with layer of chutney (if using)
6. Bake for 35-40 minutes or until the top is golden brown
7. Serve hot, garnished with fresh cilantro or scallions

Classic Grilled Chicken🍽😋

Ingredients:

• 4 boneless, skinless chicken breast
• 2 tablespoon olive oil
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon garlic powder (optional)
• 1/2 teaspoon paprika (optional)

Instructions:

1. Preheat your grill to medium high heat around 200°C
2. In a small bowl, whisk together, olive oil, slat, black pepper, garlic powder and paprika if using
3. Place the chicken breasts in a shallow dish and brush the mixture evenly onto both sides of the chicken
4. Let the chicken marinate for atleast 15-20 minutes or up to 30 minutes in the refrigerator
5. Grill the chicken for 5-7 minutes per side, or until it reaches an internal temperature of 165°F (74°C)
6. Let the chicken rest for a few minutes before slicing and serving

Monday Morning Sunshine Pancakes😋

• 1 cup all-purpose flour
• 2 tablespoons sugar
• 2 teaspoons baking powder
• 1/4 teaspoons butter, melted
• 1 teaspoon vanilla extract
• Fresh fruit or syrup (optional)

1. In a bowl, whisk together flour, sugar, baking powder and salt
2. In another bowl, whisk together milk, egg, melted butter and vanilla extract
3. Add the wet ingredients and stir until combined
4. Heat a non-stick pan or griddle over medium heat
5. Drop batter by 1/4 cupfuls onto the pan
6. Cook for 2-3 minutes, until bubbles appear and edges start to dry
7. Flip and cook for another 1-2 minutes, until golden brown
8. Serve warm with fresh fruit or syrup if desired

These fluffy pancakes will brighten up your Monday Morning!

A traditional South African Sunday treat😋 also known as Sunday Kos, Sunday Lunch or Sunday Treat🍽😋

Main Course:

• 2 kg lamb or beef (your choice?
• 2 tablespoon olive oil
• 1 onion, chopped
• 3 cloves garlic, minced
• 1 cup beef broth
• 1 cup red wine (optional)
• 2 carrots, peeled and chopped
• 2 potatoes, peeled and chopped
• Salt and pepper to taste

Instructions:

1. Preheat your oven to 180° C
2. Season the roast with salt and pepper
3. Heat oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the roast until browned on all sides.
4. Add the chopped onion and cook until softened
5. Add the garlic, beef broth and red wine (if using). Cover the pot
6. Transfer the pot to the preheated oven and roast for about 2-3 hours or until the meat is tender
7. Add the chopped carrots and potatoes to the pot for the last hour of cooking

Side Dishes:

• Rice or pap (maize porridge
• Roasted Vegetables (like broccoli, cauliflower or brussel sprouts)
•Gravy (made from the roast's pan drippings and some flour or cornstarch)

Dessert:

• Traditional South African mapha pudding or a fruit salad

Friday Fiesta Chicken 😋

Ingredients:

• 1 lb boneless or skinless chicken breast, cut into bite-sized pieces
• 1/2 cup salsa
• 1/4 cup olive oil
• 2 cloves garlic, minced
• 1 teaspoon ground cumin
• 1/2 teaspoon paprika
• Salt and pepper to taste
• 1 cup shredded cheddar cheese (optional)
• Fresh cilantro, chopped (optional)

Instructions:

1. Preheat oven to 400° F (200°C)
2. In a large bowl, whisk together salsa, olive oil, garlic, cumin, paprika, salt and pepper
3. Add the chicken pieces and toss to coat
4. Spread the chicken on a baking sheet and bake for 20-25 minutes or until cooked through
5. If using cheese, sprinkle on top and return to the oven for an additional 2-3 minutes, until melted
6. Garnish with chopped cilantro, if desired
7. Serve hot and enjoy!

Rice Salad With Shrimp

Ingredients:

• 750g shrimp/prawns, in she'll
• Juice of 11/2 lemons
• 6 tablespoons extra-virgin olive oil
• 2 cups/400g short-grain rice
• Salt and ground white pepper
• 4 tablespoons arugula/ rocket, coarsely chopped

Preparations:

1. Cook the shrimp in 2 quarters (2 litres) of slated boiling water and the juice of 1 lemon for 5 minutes
2. Drain and let the shrimp cool
3. She'll the shrimp and devein
4. Chop off the heads and rinse thoroughly in cold running water
5. Place in a bowl with 4 tablespoons of oil
5. Cook the rice in 2 quarts (2L) of boiling water, salted, for 13-15 minutes or until tender
6. Drain the rice and pass under cold running water
7. Drain again and dry in a clean towel
8. Place in the bowl with the shrimp.
9. Mix carefully, adding salt and pepper to taste
10. Add the remaining lemon juice and oil.
11. Add the remaining lemon juice and oil
12. Just before serving, add the arugula and mix again

Grilled Cheese Sandwich and Tomato Soup🤗😋

Ingredients:

• 2 slices of bread
• 1-2 slices of cheese (your favorite)
• 1 tablespoon butter
• 1 medium tomato, diced (or 1 cup of canned tomatoes)
• 1 cup chicken broth or vegetable broth

Instructions:

1. Butter the bread, place cheese in between and grill until golden brown
2. In a pot, heat the diced tomatoes and broth over the medium heat
3. Blend the mixture for a creamy soup
4. Serve the grilled cheese sandwich with tomato soup

Balsamic Glazed Chicken with Roasted Vegetables 🍽😋

Ingredients:

• 4 boneless, skinless chicken breasts
• 1 cup mixed roasted vegetables (such as zucchini, bell peppers, cherry tomatoes and onions)
• 1/4 cup balsamic glaze (or reduced balsamic vinegar)
• 2 tablespoon olive oil
• Salt and pepper
• Fresh basil leaves for garnish

Instructions:

1. Preheat the oven to 425°F (220°C)
2. Season the chicken with salt and pepper
3. In a large bowl, toss the mixed vegetables with olive oil, salt and pepper
4. Spread the vegetables on a baking sheet and roast for 20-25 minutes or until tender
5. Meanwhile, grill or sauté the chicken until cooked through
6. Brush the balsamic glaze during the last few minutes of cooking
7. Serve the chicken on top of the roasted vegetables, garnish with fresh basil leaves
