Vitamin A
Most popular writings on nutrition create the impression that the body’s requirements for vitamin A can be met exclusively with plant foods like carrots, squash, green leafy vegetables and orange-colored fruits.
But true vitamin A is found only in animal foods. The water-soluble nutrients called carotenes found in plant foods are not true vitamin A but are the precursors or pro-vitamin A. The best sources of true, or preformed, vitamin A is cod liver oil, liver and other organ meats, fish, shell fish and eggs, butter and cream from grass-fed animals.

The Chinese population were fermenting cabbage over 6000 yrs ago. Food fermentation dates back over 7000 yrs ago so fermentation is not new. Civilization didnt really understand the mechanism behind the process but the health benefits were well recognized. Fermentation is the metabolic process of converting carbohydrates like sugars into either alcohols or carbon dioxide or organic acids. It requires either yeast, bacteria or both and occurs when organisms are deprived of oxygen (respiration without air) In the process, good bacteria convert the sugar molecules in the food to lactic acid and in doing so, the bacteria multiply and proliferate. The lactic acid protects the fermented food from being invaded by pathogenic bacteria because of the low ph of the environment.
Not only does fermented cabbage fuel healthy gut bacteria, it also contains , a chemical needed for transmission of nerve impulses from the brain through the central nervous system. What other ferments are you enjoying?
