Shrubs prepped and ready to ferment
Summer fruits are declining. Make some Shrubs for winter. Use plums, mangoes, figs, nectarines, peaches, blueberries, pineapple- whatever is still plentiful and still inexpensive.

Tastes my first ‘Shrub’ drink in Bali recently. It was so delicious and refreshing, and 1000 ways to make it. My first Shrub Cordial in the making. Blueberries and lavender. Ratio 2:1:1 berries - sugar - white wine vinegar. Place berries in a jar, add sugar and lavender. Shake vigorously to break up the blueberries. Allow to macerate in the fridge for a few days. Make sure to squeeze all the juice and strain through muslin. Add vinegar to taste. Refrigerate for up to a month. Serve with sparkling water or tonic. Next I’m going to make a shrub with peaches, cinnamon sticks, habanero, sugar and mix with apple cider vinegar.

, Pererenen, Canggu, Bali. Probably the best sourdough I’ve eaten - I said this before last year and happy to see that they have moved to bigger premises and extended their offering considerably. Sadly ive not managed to chat to the baker as they don’t seem keen on sharing nerdy bake talk. I’ll try again next year. I hope they go from strength to strength.
