Stop cooking one dinner at a time!
Meal prep takes less effort than you think and it’s a great way to stay on plan.
Meal prep is a tool we tell all our clients to use so they can always have something good ready, and not have to resort to crappy foods when hunger comes.
It took me 20 minutes to put together a big pot of ground beef with organs.
All cooked in tallow (rendered from our own cooking and saved in the freezer) with onions and garlic, and seasoned with salt, oregano, and rosemary.
Delicious, nutritious and ready to eat whenever hunger strikes.

To all my past, current and future clients who had their organs and glands removed (gallbladder especially) and told they weren’t necessary…

The removal of gallbladders and other organs deemed “not necessary” is rampant.
It’s easier to get rid of a problem than trying to fix it. However humans do not fully understand the complexities of the human body and trying to tweak with an ancient system we only have a superficial knowledge of will always provoke a problem we aren’t equipped to anticipate…

This is the latest blood sugar reading of my diabetic client!
He came to us 2 months ago after having a constant high blood sugar of 140+, fatigued, taking multiple prescriptions and being told that insulin injections, metformin and all the other meds he was taking were the only way to manage his condition.
Today he doesn’t need half of the meds and is talking to his primary physician to drop more or drastically reduce doses.
It’s very exciting to show people that type 2 diabetes and many other chronic illnesses are due to lifestyle and completely reversible without medications!
Obviously there’s more work to be done but I couldn’t be more proud of how far he’s come. It’s not easy to change eating habits but definitely worth it. Your life might depend on it.

You probably heard me talk about Collagen a couple times. So here goes another gem to drive the point home.

Cold therapy is a part of our day-to-day habits now.
It’s been a while since we started dabbling with cold plunges, we started just by getting in the San Francisco Bay a couple times a week (Temperature hovers around the high 50s most days) which was a good introduction to this new habit.
Now we made the leap and bought a cheap ghetto outdoor bathtub and we’re just filling with ice.😂
Intentional exposure to extreme temperatures mimics an ancestral practice that today is completely forgotten due to our technological advances and our complete dominion of indoor temperatures with central heating units and air conditioning.
These rapid exposures to extreme temperatures have enormous benefits in our physiology.
- It forces our bodies into small stress reactions with huge anti-inflammatory properties.
- It recruits brown fat which has metabolic roles being able to burn sugar, fatty acids and amino acids to increase our body core temperature protecting us from the cold and helping us stay lean. Most adults lose brown fat as a side effect of growing up in temperature controlled environments and only possess white fat with no metabolic roles which its only function is to store energy.
Cold exposures will not only help you stay lean but it also has an ordeal of other benefits:
- Releases “happy” neurotransmitters in the brain (endorphins, serotonin, dopamine) easing depression and other neurological symptoms
- Boosts immune system
- Combats inflammation and symptoms related to it like arthritis and chronic pain

Thymus or Sweetbreads is rich in DAO, an enzyme that breaks up histamines, and can help your allergies subside.
If you’re new to eating organ meats I highly recommend you start with sweetbreads.
It has a very mild taste and is easy to prepare. You can coat it with coconut flour or pork rinds crumbs and throw it in the airfryer for a satiating and nutritious meal.

Low carb days are like…
Breakfast: Offal ground beef and eggs
Strength/resistance training
Dinner: Air-fried Lamb Chops
You see how low carb days are way less labor intensive when it comes to preparation of meals.
You also eat less often as protein and fat satiates us in such a way that we don’t feel like making more then 2 meals.
That goes to show how the distinct fuels have different hormonal impacts in our physiology.
Carbs have the power of giving you instant energy but its shelf life is short and you feel like “refueling” more often, hence the saying “Carbs keep you hungry” although this saying fits better when you’re talking about processed carbs and sugar which will completely bypass your satiety signals and make you ravaging for the next “fix”.
Ancestral carbs like Fruits, Roots and Honey in the other hand will have much more of an impact in your hormonal signaling filling your glycogen stores, keep you more hydrated among other enzymatic functions.
An Ancestral Low Carb diet is the most evolutionarily consistent diet for humans and should be how we nourish ourselves most days (except for high end professional athletes that might require a different approach), and Ancestral Carbs can be used strategically in an anti inflammatory Ancestral lifestyle.

Carb-up days are like…
-Breakfast: “Crepioca” (Tapioca mixed with an egg)
-Sprints to put all the powerful and immediate fuel from the sugar to good use.
-Lunch/Happy hour: Poutine Fries fried in duck fat 😋 and Oysters.
-Strength Training to guide all the sugar to the muscles instead of hanging out in the blood becoming inflammation.
Dinner: Panfried Salmon with mashed Yuca and Brussel Sprouts.
In a non-inflamed biological territory your metabolism can be flexible and able to Carbs and Fats interchangeably.
Fat is the better fuel less inflammatory and one that we have used for most of our evolution as humans.
However, Carbs have their place in the human diet as they were always present in specific seasons providing us the quick immediate fuel to run from a threat or to modify our metabolism in order to store more fat for times of scarcity (aka winter).
This ability to use more than one fuel source made us the most dominant species in the planet.
Additionally, our hormones evolved to expect these different inputs.
Nowadays our carb-centric modern world with help from all the hormones disrupters in our environment like glyphosate, plastic, fragrances, etc, throws off the hormonal balance so crucial for us to be healthy.

Like it or not plant foods provide less nutrition than animal foods, that is a fact! It can be measured.
Now new research is finding even less nutrition in our vegetables.
Poor agricultural practices and land management affects soil health and vegetables have less nutrients to extract from it.
Mono crops are killing soils and the demonization of animal foods takes animals out of the pasture where they are a key part to its regeneration.
Without animals on pasture soils die!
Think again when you prefer your veggies over your steaks. Your health depends on it.
