I was skeptical about the whole “cook pasta right in the sauce” trend but wow, was I wrong. Not only is this creamy chicken and asparagus orzo delicious, it also makes for such an easy one pan meal.

Fresh asparagus is comin’ in hot and this recipe lets it shine. Plus, it’s perfect for Mother’s Day if you want to impress Mom without spending hours in kitchen.

This one needs to get into your regular rotation STAT.

I’m not usually first in line for boneless pork chops, but give them a sweet, tangy pineapple sauce and suddenly we’ve got a dinner worth repeating. Budget-friendly, easy to make, and perfect for busy weeknights.

Apparently it’s spring… but it’s still snowing where I live 🙄
I’m also getting over a touch of the flu and this soup is all I can think about.

It’s light but satisfying with lots of vegetables, warming turmeric, creamy coconut milk and feels like medicine in a bowl.

It’s also one of those “clean out the fridge” soups because it’s super flexible so you can use what you have on hand.

🍲 Guinness Beef Stew

I started out researching Irish stew recipes and came across a recipe with a few interesting twists, which of course sent me into experiment mode. After a few tweaks to simplify things, this slow cooker Guinness beef stew was the result.
