Slow-Cooker Beef & Broccoli

Ingredients:

1. Steak (here we used skirt steak)
2. 1 cup broth
3. 1/2 cup soy sauce
4. 1/2 cup brown sugar
5. 3 tbsp sesame oil
6. 1 tbsp Sriracha
7. 3 cloves minced garlic
8. 2 tbsp cornstarch or flour
9. Broccoli
10. Cooked rice

Directions:

1. In slow-cooker, place steak, & following above ingredients except cornstarch/flower & broccoli & rice
2. Cover & cook on low for 3-4 hrs or more
3. Whisk cornstarch with some water & add to slow-cooker
4. Add broccoli & cook another 20 mins
5. Serve with rice

Swedish Meatballs (One Pot)

Ingredients:

1. 1 cup beef or veggie stock
2. 1 cup heavy cream or milk
3. 3 tbsp flour
4. 1 tbsp soy sauce
5. 1 tsp black pepper
6. 1/2 tsp rosemary
7. 1 lb ground beef (or use premade meatballs)
8. If making your own meatballs, you will just need to mix ground beef with breadcrumbs, onions, garlic, spices, an egg, etc.
9. 1 package of egg noodles

Directions:

1. Cook meatballs in oil
2. Add beef stock & the rest of the ingredients
3. Cook & stir over med-low until thickening

Chicken Parmesan, Side of Sauteed Kale

1. Preheat oven to 400 F
2. Prepare Chicken breasts by seasoning, then coating in flour
3. Dip chicken in egg and then roll in bread crumbs & parmesan
4. Heat oil in pan and cook chicken on all sides until golden-brown
5. Either make marinara or use premade
6. Pour marinara in baking dish, add chicken, & top with mozzarella & bake 10 minutes
