Ok...so slightly chargrilled at the top but I promise you it did taste nice. Hubby gave it 8 out of 10 (for those of you who know my husband - that is an amazing score!) - my take on bread and butter pudding but using finely chopped red apples instead of black currants (from Costco - almost like your red versions of a grandmother’s cooking apple as they’re pretty enormous so I imagine not pesticide free!). Bread was whole meal but you’re better off using white bread which is slightly stale. It does still work with granary bread (surprisingly!) but I imagine that would not be to everyone’s taste/

Each layer you should build up like a lasagne so each layer has bread which is buttered both sides (can’t get hold of real butter atm so just used Clover), some sprinkled white sugar (although brown is just as good) and some Kirkland Signature Agava Organic sweetener (tastes just like syrup - from Costco) but it is better to add some milk and cream if you have some. Last week, I used sliced banana instead of apple and with milk and cream including Mixed Spice and three cinnamon sticks.
That one was rather magnificent!

Rationale: So we have approached a crisis where we have to stay home and stay safe. As I’m now home with my just-turned-three-year-old and my husband is on conference calls all day, I’ve now transformed into an amateur home maker practically overnight! I’m absolutely loving getting (a bit) creative in the kitchen. I’m trying to involve my daughter in the cooking as much as possible. I’m a school teacher, by trade, so although it’s strange not being in the classroom...I though why not flip this situation and start learning something new myself? I will always try to experiment but within the limitations we have with reference purchasing much needed items and keeping my fussy eaters (my husband and daughter), at home, happy.

Tonight, I made my own icing by melting some clover butter with sugar and two toffee crisp bars (as this was all I had in the cupboard). I added one tablespoon full of bitter chocolate powder, when it cooled, I then added the mixture to a jug and added self-raising flower. When the mixture was still warm, I added this to the cake. I’m ashamed to say the cake mixture was created courtesy of the Peppa Pig franchise - specifically the Muddy Puddles box - didn’t have a cupcake cake tin so made it as one cake! So easy as it only takes one egg and a bit of water. Great to cook with your little ones but, sadly, my three year old was already in the land of nod!
