APPEX (Asian Pacific Islanders Promoting Educational eXcellence) is an interactive pre-conference session designed to cultivate the professional development of Asian Pacific Islander Desi American (APIDA) student affairs professionals in a multi-culturally competent and holistic context. The session will also address current issues related to leadership development, intersections of identities, and career growth.

The NASPA APIKC Cooking Club returns on Friday, November 14, 2025! Learn how to make Inarizushi, also called Yubuchobap, seasoned tofu packets filled with rice, from Joanne Shiosaki. After her tutorial, Joanne will share cooking tips and answer all of your questions on meal prep.

Joanne is a third-ish generation Japanese American. She recently retired from Gonzaga University after a 30-year career in Student Affairs. Joanne says that she is obsessed with Asian food that is currently being fueled by watching K dramas! Inarizushi was something that her mom only made during holidays and special occasions because it was time consuming. Joanne will show you an easy way to get this delicious dish on to the plate to enjoy anytime!
