๐ฅฉ Ingredients
Beef bones, beef shank, and pork hock: 2 kg total
๐ฅฃ Seasonings:
- 3 tbsp Huแบฟ shrimp paste
- 5 stalks lemongrass
- Shallots
- Ginger
- Annatto oil
- Rock sugar
โญ๏ธ Others:
- Crab paste cakes (chแบฃ cua)
- Thick rice noodles (bรบn)
- Fresh vegetables: water spinach, banana blossom, bean sprouts
๐ฒ Make the Broth
Simmer the beef bones with roasted shallots and crushed ginger for 2โ3 hours, skimming off any foam.
๐ช Cook the Meat
Add the beef shank and pork hock to the broth and cook until tender. Remove, soak in ice water, then slice thinly.
๐ถ๏ธ Build the Flavor
Mix the shrimp paste with water and strain to keep the clear liquid. Sautรฉ minced lemongrass and garlic in annatto oil until fragrant, then add the strained shrimp paste and bring to a boil. Pour this mixture into the broth.

Season with salt and rock sugar to taste. Add the crab paste cakes and cook until done.
