TIKTOK TOMATO AND FETA PASTA
7 Easy Ingredients:
cherry tomatoes
1 block of feta
garlic
basil
olive oil
chili flakes
pasta
Preheat oven to 200c and pop the tomatoes in an oven proof dish and toss with olive oil, salt, pepper and some chili flakes. Then squeeze block of feta in the middle and pour another glug of olive oil on top. Cook in oven for about 40 minutes until tomatoes have burst.
Once this was cooked I threw a dash of olive oil and chopped garlic in a pan and fried on a medium to high heat for about 30 secs and then added the tomato and feta in and stirred until all feta had melted and all tomatoes had popped. Tossed in the cooked pasta (I used wholegrain fusilli) and chopped fresh basil and done π
This was so tasty and had a restaurant style decadence to it! So easy to do and something I'll probably be repeating weekly!

Anybody else just love good old cheese and tomato on toast, with loads of cracked black pepper and salt on top??!
I used to make this lunch a lot as a sandwich in my university days because it was so quick and easy. I would always use the cheapest cheese I could find, murder it with ketchup and fry it in a pan to make it all crunchy and gooey ππ Things have changed slightly now that I'm 33 and trying to be a more respectable human being π

So simple - cold pearl barley summer salad π₯π₯π₯! With edamame beans, fresh chopped tomatoes and diced avocado. Dressed with olive oil and balsamic vinegar.
This was quickly thrown together last night for dinner with some leftover ingredients I had lazing about in the fridge - would love to try adding some roasted pumpkin and feta to it next time for some extra substance and tanginess ππ! Was so lovely eating it warm for dinner and having what was left of it cold for lunch today!

Korean kimchi dumplings for dinner πππ Since moving to Vietnam, kimchi has become a staple part of my diet and I love adding it to all sorts of different meals. It's made from fermented cabbage and packed full of probiotics! These dumplings are so yummy and filled with onion chives, garlic and ginger too. Unfortunately I have to report a chop stick was lost in the making of this post, as it threw itself over my balcony whilst I tried to get some decent light on the dumplings π¬ Will keep you updated on it's survival....
