🌿🐢 Shelly’s Kindergarten Adventure: A Cozy Upgrade! 🐢🌿

This week in Kindergarten, our little friend Shelly the turtle had the most exciting time!

The children were buzzing with joy as they welcomed Shelly back, and guess what? She got a brand new house upgrade! 🏡✨ Her cozy little space now has a special hiding spot that quickly became her favorite place to snuggle and peek out at her new friends. Every now and then, you’d see just her tiny head popping out, as if she was playing a quiet game of hide-and-seek.

The Kindergarten students took excellent care of Shelly. They made sure she was happy and comfortable every single day—feeding her yummy treats, refreshing her water, and checking on her like true little caretakers. Shelly must have felt like royalty! 👑🐢

This week was extra special because Shelly even got to participate in a very important activity. The children were busy creating posters for the Child Abuse Whistle Stop, and of course, Shelly was right there with them—quietly observing, “helping,” and keeping them company as they worked. 🖍️💛 It was a beautiful moment of learning, kindness, and using their voices for something important.

But oh… if Shelly could talk, she might have shared a few mischievous secrets from her time in Grade 1 last week 🤭. Let’s just say… there were a few unexpected adventures and tiny surprises that kept everyone on their toes!

This week, though, she was calm, cozy, and clearly enjoying all the love and attention from her Kindergarten family.

Now the big question is… 👀

Spinach Feta Muffins
These Spinach Feta Muffins are a delightful twist on the classic breakfast muffin, combining the earthy flavors of spinach with the tangy kick of feta cheese. They're perfect for those mornings when you're in a rush but still want something satisfying and nutritious. The addition of sun-dried tomatoes adds a touch of sweetness and color, making these muffins not only delicious but also a feast for the eyes.
Ingredients:
2 cups spinach, finely chopped
1 cup feta cheese, crumbled
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 cup milk
1/4 cup olive oil
1/2 cup sun-dried tomatoes, chopped
Directions:
Preheat oven to 375°F (190°C) and line a muffin tin with paper liners or grease with cooking spray.
In a large bowl, whisk together flour, baking powder, salt, and pepper.
In another bowl, beat the eggs, then mix in the milk and olive oil.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the spinach, feta cheese, and sun-dried tomatoes.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
