How about Garlic Butter Steak with Roasted Vegetables? It's juicy, flavorful, and easy to make!
Ingredients:
2 ribeye or sirloin steaks
3 tbsp butter
4 cloves garlic, minced
1 tsp fresh rosemary (or thyme)
1 tbsp olive oil
Salt & black pepper (to taste)
1 cup cherry tomatoes
1 zucchini, sliced
1 bell pepper, sliced
Instructions:
Prepare the steak: Let the steak sit at room temperature for 30 minutes. Season both sides with salt and pepper.
Sear the steak: Heat olive oil in a pan over medium-high heat. Sear each side for 3-4 minutes for medium-rare.
Add flavor: Lower the heat, add butter, garlic, and rosemary. Spoon the melted butter over the steak for 1-2 minutes.
Rest: Remove the steak and let it rest for 5 minutes.
Roast the veggies: Toss tomatoes, zucchini, and bell peppers with olive oil, salt, and pepper. Roast at 400°F (200°C) for 15 minutes.
Serve & enjoy: Slice the steak and serve with roasted vegetables.
