TLDR: Prepare for an incoming slew of healthy partially foraged recipes Im trying out while i try to lose the baby weight i gained from Vivienne.

I had a small appetizer of salmon-spicebush mousse and pork rinds to dip but I forgot to take a pic of that. Here’s a yummy healthy lunch I made. I wanted to do something quick and simple so I made charred wild garlic steamed ‘beef and broccoli’ It’s just baby broccoli spears with a pat of butter, black pepper, and charred wild garlic salt tossed in a hot skillet with some leftover beef roast.

I make the charred wild garlic salt by gathering fresh wild garlic shoots in the spring, cut them into 2-in pieces and massage them with salt. Put them on a baking tray and dry them in the oven till crisp. Then flip on the broiler and just char the edges a little before removing them to cool. Pop the cooled, dry bits into a blender and blend until it’s the consistency you prefer for your seasoning.

The salmon-spicebush mousse was made from crushing the dried leaves of the spicebush plant and mixing it with baked salmon. Add cream cheese and blend it with a mixer or food processor until smooth. Salt &pepper to taste. The ratio on this depends on how much you’re making. I used about 6 oz or so of salmon, a few spicebush leaves, and maybo 2 oz of cream cheese. This made enough that i only ate half and have another serving for later/tomorrow

Next time I’ll keep plating in mind 😂😅

I’ve been watching my winged sumac patches 😍 I have so many and they are just BEAUTIFUL this year! They are almost ripe and I can’t wait to harvest them for spice!

It’s time to make Sumac Powder! It reminds me of to***co and lemon juice combined. It’s the best ‘native’ Tajin! Sumac is a spice typically used in Middle Eastern cooking (Za’atar spice). It’s easy to tell apart from poison sumac, which is a vine that has white berries! All red berried sumacs are edible. In my area of the Ozarks we have Fragrant Sumac (Rhus aromatica) in the late spring early summer and now both Smooth (Rhus glabra) and Winged Sumac (Rhus copallinum) ripening now. If you’re really lucky you’ll also find Staghorn Sumac!

To make spice: Sun-dry or dehydrate berries, then add dried berries to a coffee grinder and sift out seeds. It’s wonderful as is sprinkled over hummus, yogurt, and more. I love to add fresh sumac powder with lemon juice and olive oil for an easy salad dressing, meats, corn on the cob, and even Melon!

The lavender spiderwort sugar is vibrant and a beautifully fragrant finishing sugar atop baked goods or used as a ri***ng sugar for mixed beverages! Hey everyone!! I’m down here at Nemo Marina - Lake Pomme de Terre, Missouri selling sodas, fresh squeezed lemonade/limeade, and this weekend I have dandelion root brownies, spicebush chocolate chip cookies and lavender-spiderwort sugar! I also have a new soda flavor on my menu this week, wild plum! Try it in a limeade 😍😮‍💨🤤 it’s phenomenal… I highly recommend trying the brownies too! They are SOOO decadent and fudgy!! I make them with premium chocolate and my homemade vanilla extract (grade AAA Madagascar vanilla beans steeped for a year in Maker’s Mark bourbon!) If you like baking or making pretty cocktails, the lavender sugar makes a delicious finishing sugar on top of baked goods or a eye-catching ri***ng sugar for cocktails/mocktails! Come see me this weekend for a delicious treat! I’m here till 5 this evening, Saturday 12-8, and Sunday 12-6!

I picked a bag full of immature black walnuts to make the most delicious thing I’ve EVER put in my mouth… Green Black Walnut Preserves. Let me preface this by saying that I’ve always hated the taste of black walnuts so I was genuinely surprised when I sat down with a jar of these (gifted to me by Rachael West of Eating The Ozarks) and ate THE WHOLE JAR. She kindly sent me the recipe so I’m making this labor-intensive treat! After picking, I spent 4 hours peeling them with a vegetable peeler, and pricking the surface area of the flesh before submerging them in water in a fermentation jar! Now they will ferment for 10 days before I candy them in syrup! Make sure you use a good pair of gloves though! I used some cheapie latex ones that I usually use to apply my henna, but they did not hold up at all. I ripped 2 pairs before I just decided to finish the last 10 or so walnuts barehanded. Just because the hulls are green now does not mean they don’t stain! My hands look hideous rn! I will update in 10 days once these have soaked and fermented!

Have you ever tried a carbonated blueberry lemonade? What about a black cherry limeade? Lavender soda? All the ingredients in my syrups are hand-harvested and the only ingredients in my syrups are the botanical matter, water and sugar. I never use food dyes, preservatives, caffeine, etc. I currently have 12 fresh harvested flavors! I’m here today till 8pm, and tomorrow from noon to 5 pm!

Hey everyone! I’ve decided to have a rainy weekend special tomorrow and Sunday! If you come see me at Nemo Marina - Lake Pomme de Terre, Missouri I’ll give you 20% off your beverage! I’ve added two new flavors I just foraged yesterday (Spicebush and Spiceberry!) And I’m now offering fresh squeezed lemonade and limeade (fizzy or not!) Never been a better time to try something new! I got my new A-frame chalkboard sign for the soda bar and I just freehanded this! I don’t really consider myself an artist and chalk is kind of hard to work with lol so I’m pretty proud of it! Bo saw me snap a picture and he hopped in the frame to be my spokesmodel, then he decided he didn’t want to anymore and rolled his eyes at me, then he went back to being his normal sassy self with Nana 😂
