Central Arizona College offers a Nutrition & Dietetic Technician Associate of Applied Science degree, which is available online and is accredited by the Accreditation Council for Education in Nutrition and Dietetics (ACEND).
The NDT program emphasizes medical nutrition therapy, education & wellness, and food service management. NDTRs work independently or in collaboration with Registered Dietitians Nutritionists in a variety of employment settings, including health care, business and industry, community, public health, foodservice and research. NDTRs are trained in food and nutrition and are an integral part of healthcare and foodservice management teams.

The Massage Therapy program at CAC offers a 40-credit certificate that prepares students for one of the most in-demand occupations in the US.
Students gain practical experience through the CAC massage clinic and will be prepared to work in spas, clinics, physician offices, hotels, and more!

Central Arizona College now offers live-streaming Structured Literacy Courses that meet the training requirement for the K-5 Literacy Endorsement with the Arizona Department of Education.
- EDU320A Structured Literacy A: Science of Reading and Phonics (8 Week Class, Tuesdays from 4:30-5:45pm)
- EDU320B Structured Literacy B: Investigating Instruction, Assessment, Intervention, and Dyslexia (8 Week Class, Tuesdays from 6:00-7:15pm)
Both classes run 8 weeks, starting October 12 to December 5, 2026.
A certificate of training is provided with the successful completion of each course. After taking both courses, students are encouraged to register for the Foundations of Reading Assessment. The Arizona
State Board of Education has approved the training syllabus and documentation for Central Arizona College courses EDU320A and EDU320B as outlined by SB1572 and approved guidelines from the Arizona Department of Education.
