I’ve posted this before and I’ll post it again because we eat this once a week and it’s legit a GO TO-Specifically for two reasons, it’s quick and Foster loves it! (See my stories if you don’t believe me)

Sesame Chicken Salad

Chicken: -preheat oven 425•
✖️2 chicken breasts, same size
✖️2tbsp ghee
✖️salt, pepper, garlic powder
-pound chicken breast lightly in a plastic baggie until they are of even thickness
-place on baking sheet with foil
-sprinkle salt, pepper, and garlic powder and brush with melted ghee. Do this both sides
-bake for 15-16min, let rest. (meat thermometer should read 160-170•)
Dressing:
✖️6tbsp Olive Oil
✖️2tbsp Rice Vinegar
✖️1tbsp Coconut Aminos
✖️2tsp Sesame Oil
✖️1tsp Red Wine Vinegar
✖️6cloves Minced Garlic
✖️1/2tsp Sea Salt
✖️Red Pepper Flakes; to taste
-Whisk all ingredients together. Shake or mix before serving. This makes just enough for two salads. Double the recipe if you want your salad extra saucy or an additional salad.
Salad:
✖️Organic shredded Green + Red Cabbage w/ Orange carrots
✖️mini red bell pepper rings
✖️Persian cucumbers; chopped
✖️garnish-sliced or slivered almonds, green onion, sliced radishes

You already know what I’m about to say…
IT’s WHOLE30 DAY 30!
Feeling sooo much better from where I started. Like night and day. Mentally and physically. I had been struggling with some sort of shoulder injury for the past few months, and now it’s feeling 90% better due to lack of inflammation.

We’ll be slowly bringing back in food groups over the next couple of weeks, but will move forward with 80-90% paleo eating because that’s what we feel best on.

I stopped posting the daily eating reels because honestly it was all the same, I kept it real simple and repetitive this go around which made it less stressful, especially while work has been all over the place these past couple of weeks.😅

MAYBE I’ll get one last reel in tonight of today’s eats.

Ground meat,
sweet potatoes,
bell pepper,
onion,
pumpkin purée for the thickener,
spices,
no beans,
💯 !

BTW it’s DAY 20!!! 10 more to go and going strong. 💪🏼

Inspired by Whole30 bowl. Which is my total favorite on busy work days when I don’t want to cook.

But today I was craving it and made our own.

-Grilled chicken
-Fajita veggies
-Cauliflower rice
-Homemade Guac + fresh tomato
-Mixed greens + romaine
- cilantro lime ranch

Post workout fuel and it was a tasty one!
I was craving something a little more sweet than savory today..

Yogurt Parfait:
