The hotels achieving 30 to 53% reductions in food waste aren't necessarily the ones with the most advanced technology or the largest sustainability teams.
The ones hitting those numbers all share one practice: they measure by category, by station, and by meal period. Not by total weight at the dumpster at the end of the week.
The difference matters because weight at the dumpster tells you how much you're disposing of. Category data tells you where it's coming from, which is the only information that leads to an actionable fix.
If your current measurement stops at the dumpster, you have a disposal number. You don't yet have a reduction program.
