Sometimes we find ourselves to afraid to simply begin, because of a desire to do it only the right way. I was reminded yesterday that however imperfect the beginning is, at least it’s a beginning. By embracing the imperfections, it could lead to great things that otherwise would have never been.

One of my favorite holiday candies is toffee. Oh how I miss a hard snap, turned chewy chocolate covered toffee. Well wait no more, a sugar free on plan toffee. 1 cup unsalted butter, 1 and 1/2 cup allulose, and 1/2 tsp pink salt. Add this to a heavy bottle pan and cook until the temp reaches 350 degrees (hard crack on candy thermometer) take off the heat and add 1 tsp vanilla. Pour over a parchment lined pan (if wanting nuts make sure those are chopped and in the pan before you pour the toffee over the top) spread evenly. Sprinkle on Lilly’s milk chocolate chips and let set 5 mins. Then take an off set spatula and spread chocolate. Put in the fridge for 2 hours the break up and enjoy. 

Edit. I do leave this in the fridge. If left on the counter it will revert to more of a soft Carmel.

So today I was craving something satisfying, yet comforting. So I decided to try an Apple fritter recipe (linked below). I precooked the apples in cinnamon, splash of lemon juice and allulose to taste, before adding to the recipe. I use apple pie spice in place of just cinnamon in the recipe. I cooked the fritters in my pampered chef air fryer 400 degrees for 8 mins and turned over for another 4 mins. So yummy I didn’t really need the glaze. Going to have more for breakfast tomorrow and will pair with a nice vanilla iced coffee.

Pumpkin whip (FP)
1 cup cottage cheese
1/2 cup canned pumpkin
Super sweet or other sweetener to taste.
1 tsp Vanilla, Maple or Carmel extract
1 tsp pumpkin pie spice
Blend and enjoy

Time to refill the hubby loving seasoning!! I just refill this old Costco parm cheese container and keep it in the fridge! You can of course just order from the trim healthy mama website but if I watch the store sales I can make it myself just as easily and save the shipping! Kids devour these hubby loving nuggets. Just air fry 400 degrees 15-18 mins depending on how crispy you like them!

Was needing something delicious, on plan and chocolate! So for a fast and easy option I used my pre-prepped peanut butter banana BAM cake dry ingredients and added 1/3 cup unsweetened chocolate baking powder, along with 3tbsp extra super sweet. Came together in just 5 minutes and then about 15 minutes at 350 in the oven. THT. Pg383 for the main recipe.
