Mid-week mood: chasing clarity😌

May just rolled in + it brought a whole new energy to the roastery. We’re officially trading the heavy morning fog for something a bit more vibrant. The bar at The Brew Lab has been updated with our fresh May line-up, and honestly, the roaster has been smelling incredible lately.

The highlight of the week is easily the Santa Barbara Honduras. It’s a lot to process in the best way—imagine a bowl of ripe mixed berries + hibiscus tea, but with this beautiful, buttery finish that lingers just long enough to make you reconsider everything you knew about Honduran profiles. It’s sweet, intentional, and exactly what a Saturday spring morning in Houston requires. Available on drip and as whole bean this weekend at TFM + MVFM for you to experience at the market + at home.

At The Brew Lab, we’re leaning deep into the search for pour-over perfection this month. We’ve debuted a new dedicated pour-over menu—focusing on the variables that make a cup truly sing. If you’ve ever wanted to see the "why" behind the bloom, this is your seat at the bar. Ask us about the bed geometry or the flow rate—we’re always down to nerd out while your coffee is being dialed-in.

We have a confession...and it's not an April Fools' joke 🫣

We thought about telling you we were switching to decaf-only starting TODAY... but even for April Fools' Day, that’s taking the joke too far!

The real news is much more exciting: Purefi Coffee Roasters is celebrating our 9th Anniversary! 🥂

Nine years ago, we started taking orders and roasting coffee with a simple goal: to bring the best specialty coffee we could source to our local community. To celebrate nearly a decade of roasting and brewing and to make sure you’re fueled from your first meeting to your late-afternoon slump, we are officially expanding our hours:

OPEN Monday – Saturday: 7:00 AM – 6:00 PM

🥳Celebrate with us this week by trying our signature Creme de Cocaska or adding a splash of our housemade Rose, Strawberry, or Dirty Earl syrups to your favorite latte.

To help you update your brewing lab at home, we’ve fully restocked our brewing accessories at the roastery, including this month's featured April brewers and filters. Pair them with our single origins like Cocaska Bourbon Congo or one of the roastery exclusive Pinnacle series coffees, various high end specialty coffees in limited amounts that offer the perfect pourover moment.

No market in Tomball this Saturday (German Fest is coming to town), so we’re moving the party right down FM 2920 to the roastery in Old Town Spring. It’s the perfect excuse to see where the magic happens.

The Roastery is currently filled with the scent of our Friday batches, curated specifically for a big weekend ahead. We’ve spent the morning dialing in the roast profiles for three distinct origins that represent some of the best of what we’re brewing right now:

Cocaska Bourbon (Congo): A rare, complex find. This Bourbon varietal provides a vibrant cup with sweet plum depth that holds its own, whether you’re brewing a morning pourover or a late-night press.

Mantissa Red Catuai (Brazil): The definition of a "daily driver." It’s creamy, nutty, and remarkably consistent—exactly what you want waiting for you in the kitchen at 6:00 AM.

Guava Forest (Colombia): For the fruit forward lovers in the crowd. This lot offers a vibrant, red fruit brightness paired with warm chocolate undertones that remind us why Colombian coffee remains a staple in the coffee connoisseur's cup.
