When it’s 95 out and you don’t have central air, cooking really isn’t ideal. So, my has become my go-to this summer. Tonight’s post-practice dinner was chicken basil sausage with mushrooms, zucchini, baby Yukon golds, and red onions. Mini needed her cheese, so she topped it with Parmesan. ♥️

My mini asked for lemon bars last week, so I bought her lemons over the weekend. 😉🍋 Today she made these scrumptious lemon bars all on her own while I was finishing up Monday paperwork. 💯🥰

TBH, I normally don’t cook (much) when the kids are away, but I had a craving for beef and nachos. I didn’t make the guacamole or salsa from scratch, but opted instead to pick up freshly made/packaged containers from the deli aisle. To keep it healthier, I used grain-free tortilla chips and 96% fat free beef. It all tastes delicious!!!!

Lunch break! Mid-day trail ride with mini before evening swim practice requires more than just a protein bar. I packed us a Japanese-inspired wrap filled with smoked salmon, tamago, cucumber, avocado, kewpie Mayo and furikake on low carb tortilla. I even brought along some of yesterday’s chocolate chip oatmeal skillet cookies. ♥️🚴🏻‍♀️

It’s been a whirlwind of a long weekend, starting with two days of early swim meets and followed by sending my dancer “abroad” for summer training yesterday morning! To top it off, one of my smoke detectors that’s completely out of my short body’s reach decided to chirp at an ungodly hour this morning. But I digress! Well, at least these are my excuses for not having a full meal plan ready for this week. :/

My swimmer stepped up and made tonight’s dinner: a quick salad with Parmesan-crusted chicken tenders. 15 minutes from start to cleanup. And yes, she did the cleanup. Now we’re off to practice!
