What an amazing summer market season this has been so far!

There have been early mornings, long prep days, frequent sellouts, and plenty of lessons along the way. One of my favorite parts has been having my family step in and support this business, including my son working the booth at the Second Sunday Market.

The farmers’ market taught me how to sell my baked goods.

It taught me how to talk to customers, gather feedback, price products, package beautifully, and build relationships one conversation at a time.

Today, I’m packaging samples for local businesses and hospitality partners.

The skills that help you sell one product across a market table are often the same skills that help you land larger opportunities.

Don’t underestimate what you’re learning while standing behind your booth.

It’s preparing you for whatever comes next.

Most bakery booths make this mistake.

Everything sits flat on the table.

At a farmers market, shoppers scan booths quickly. If your products sit at table level, they disappear.

Add height to your display.
Tiered trays and risers bring products closer to eye level and make people stop.

Simple rule:
If someone 10 feet away can’t see what you sell, your booth likely needs improvements.

Most of us look at revenue and think,
“I made $480 today. Not bad.”

But here’s the deeper question:

How much did each customer spend?

➡️ If 40 customers spend $12 each → $480

➡️ If 40 customers spend $18 each → $720

Same number of customers.
Same hours at market.
Very different strategy.

That number is your Average Order Value (AOV).

When you start thinking about AOV, profit margin, and sell-through percentage — you stop running a bake sale and start running a business.

This is the shift I’m leaning into this year.

It’s not really about the discount; it gives people a reason to return instead of starting over at another booth.

If you sell at markets, read this.

Most new market bakers don’t struggle because their products aren’t good.
They struggle because they bring too much.

Overbaking “just in case” feels safe.
It’s not.

It leads to:
• Wasted product
• Lower profits
• Burnout

More product does NOT equal more sales.

What does?

Data.
Tracking.
Adjustment.

Start small.
Track what sells.
Increase slowly.

Today was slow.
Cold weather, competing events, light foot traffic.

But it was still useful.

Tracking what sells and what doesn’t is how you build a farmers market strategy that actually works long-term. Slow days are often where patterns show up the clearest.

Today confirmed something I’ve seen before:
breads and scones perform consistently in winter markets, even when traffic is low. Cookies are much more sensitive to weather, season, and crowd energy — even when they’re featured.

Every market gives you data.
The difference is whether you use it or ignore it.
