This meyer lemon cake with a lemon glaze, was made from box mix, and it is delicious!!😍 Make sure to add extra fresh-squeezed lemon juice to the recipe & glaze, for the best flavors. Top with strawberries for a little added presentation pizazz✨🍓

Lemon bars made with my great grandmas recipe🍋They are SO delicious & easy-peezy lemon squeezey to make! Recipe below ⬇️

INGREDIENTS:
Crust
- 2C flour
- 1/2C powdered sugar
- 1C butter
Filling
- 4 eggs
- 2C sugar
- 1/3C lemon juice
- 1 1/2 tsp lemon rind
- 1/4C flour
- 1 tsp baking powder
INSTRUCTIONS:
1. Blend powdered sugar, flour, & butter (texture will be crumbly)
2. Press into 9x13x2 pan
3. Bake at 350 (until light brown) Cool crust for 10min
4. Beat eggs slowly & add sugar
5. Blend in juice & rind
6. Blend in flour, baking powder, & mix all
7. Pour over crust in the pan
8. Bake at 350 for 25-30min
9. Cool & sprinkle with powdered sugar (these are delicious served warm or freeze them & store for later!)

The Thursday breakfast spread: oatmeal, chocolate chip waffles with brown sugar whipped cream, fresh strawberries & maple syrup 😍

INGREDIENTS
- 2 cups oat flour (make your own: blend oats to a powder)
- 2 tbsp coconut flour
- 2 tsp baking powder
- pinch of sea salt
- 1 large banana, mashed
- 1/4 cup coconut oil, melted
- 1 large egg
- 1 cup unsweetened almond milk (add more as it thickens)
- 1 tsp vanilla extract
- 1/4 cup chocolate chips
DIRECTIONS
1. Combine oat flour, coconut flour, baking powder and salt in a large bowl.
2. In a separate bowl combine banana, coconut oil, egg, almond milk and vanilla.
3. Add wet ingredients to dry and stir to combine. Stir in chocolate chips. Let mixture sit for 5 mins.
4. Heat up waffle maker and spray or brush with coconut oil.
5. Add additional almond milk to mixture if too thick (no more than a 1/4 cup).
6. Add a 1/3 cup of batter to your waffle maker and cook according to waffle maker instructions.
7. Serve immediately with maple syrup, nut butter, fresh berries, or toppings of choice.
8. Let cool and freeze if not eating immediately.

1 ½ cup all-purpose flour
1 ½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
¼ cup canola or vegetable oil
1/3 cup brown sugar
1/3 cup granulated sugar
½ cup plain yogurt (or sour cream)
¼ cup milk
1 teaspoon pure vanilla extract
1 cup grated zucchini (about 1 medium)
1/3 cup chocolate chips + more to sprinkle on top (optional)
DIRECTIONS
- preheat oven to 350 degrees
- mix the dry ingredients
- mix the wet ingredients
- combine wet and dry (don’t over mix)
- pour into prepared loaf pan
- bake for 50-55min
