The perfect food to eat with hot chocolate? Tamales. You can see tamales have been accompanying chocolate for a long time in this Mayan Codex. They are circled below the man not sharing his foamy cup of chocolate. Tamales are hard to come by in the UK but makes delicious tamales. Sometimes and I have tamale parties with neighbors at my house.

Soconusco cacao is well known. Do you know the origin of the word? comes from the Nuahuatl word XOCONOSTLE which is a sour cactus fruit. The Aztecs called the area Xoconochco, meaning ‘Place of sour cactus.” There is a xoconostle in the hands of Thomas, owner of outside of San Miguel de Allende, Mexico. They are sour and still put into salsas and puts them in some of their chocolate bars when available. is a great place to learn more.
