I will dedicate our dance tonight and the breathtaking sunset to my beautiful cousin Courtney who unexpectedly passed away this week. May she eternally dance with the other beautiful angels watching over us all.

This is one of my favorite low cal comfort food recipes. I tried dozens of combinations to get this just perfect. They make great low calorie shells for sweet or savory snacks. Perfect compliment to our Zumba workouts.

We had a great Zumba night! Thank you all for coming out in the rain and fog to dance with us!
