Caesar Salad is one salad I can get even Jason to eat. He typically avoids all things green. Here is a great recipe for a delicious low fat, low carb Caesar dressing that is super simple to make. Throw some romaine, diced chicken breast cooked with lemon juice and Italian seasoning , and a little bit of Parmesan in a bowl and toss with the dressing and you have a quick easy dinner especially for these warm summer nights. https://laughingspatula.com/3-minute-skinny-caesar-dressing/

This was always one of my all time favorites when I was training. You can use it on salad, or to season your chicken, tuna, etc. Nathan loves it too. It gives great flavor in a small servings, has 400mg of omegas per serving, and only 1g of sugar.

Ok so today I worked multiple jobs, got Nathan’s skates sharpened on my lunch, ran to the grocery store and post office on my way to the rink where I sat watching my son at one of three camps he is doing all summer from 5-7. Now he is off the ice and hungry. Do I feel like cooking? NO! So what can I throw together fast and still make healthy choices. This meal took me under 15 minutes to make and required no real cooking aside from pushing a few buttons on my microwave. The secret is to have emergency items in your fridge at home you can throw together fast. 1- a Rotisserie chicken. You can get a giant one at Costco for $5 (every grocery store has them too), 2- frozen veggies whatever kind you want, 3 - a steamable bag of red potatoes, sweet potatoes, or rice for those in your home eating carbs at dinner like my son who just skated for two hours. As you can see I have it plated two ways - one with carb and one without carb. This does not have to be complicated unless you make it complicated. Be realistic about your life and the time you have and always have a backup plan waiting in the fridge.
