A simple paper strip could revolutionize food safety.
Researchers at the University of Nevada, Reno School of Medicine have developed a rapid test that can detect a dangerous foodborne toxin in just 15 minutes. Led by Vanessa Berner, Ph.D., and third-year medical student Peter Asimenios in the AuCoin Laboratory, this cost-effective strip identifies staphylococcal enterotoxin B — a common cause of food poisoning.
Unlike current methods, which can be time-consuming and labor-intensive, this test is more sensitive and works across a wide range of foods with minimal preparation.
By enabling faster detection at the source, this innovation has the potential to prevent contaminated foods from reaching consumers — and improve how we diagnose and respond to foodborne illness.
