Sunday Food Prep/Tip: Best Overnight Oats
I’ve tried a lot of overnight oat recipes and I think this one is the best (recipe in comments)! Followed the recipe exactly and added some blueberries the next morning…delicious! Sunday Food Tip/Prep: Brie & Almond Stuffed Dates
This is a simple, elegant bite to put out for Christmas and New Year’s if you are hosting. It can be served hot out of the oven or at room temperature. It can be assembled earlier in the day, refrigerated, and placed in the oven just before your guests arrive. You can also change up the cheese or nut topping (just make sure the cheese will soften but not necessarily melt in the oven). Link to recipe in comments!

Sunday Food Tip/Prep: Chocolate Puffed Quinoa Crisps
You may have seen these chocolate quinoa crisps at the market or on a flight (United hands them out with the pretzels now). They are delicious and a relatively guilt-free treat…and now you can make them at home! I keep them in the freezer and take one out to thaw when I want something sweet. They would also make great holiday treats for friends!
Ingredients:
3.5 cups of puffed quinoa (order on Amazon)
1 cup of good chocolate (if you want to keep sugar low, use Lily’s brand)
1 Tablespoon of coconut oil (measure in solid form)
Melt chocolate and coconut oil together in a microwavable bowl (or in a double boiler on the stovetop). Pour over the puffed quinoa and coat completely. Use an ice cream scoop to make rounded balls and place on a parchment-lined cookie sheet. Pop in the refrigerator for at least 20 minutes.
Notes:
-You can flatten the balls to make more of a “crisp” shape if you prefer
-You can use a mini ice cream scoop to make smaller ones
-You can add some holiday sprinkles to make them more festive
-the balls may seem loose when you first put them on the baking sheet but they will harden up in the refrigerator.

Sunday Food Prep/Tip: Caramelized Onion, Cranberry and Rosemary Tahchin (Persian Rice)
If you are looking for a unique showstopper side dish for Thanksgiving (or for anything), this is it! I found this recipe (link in comments) in the New York Times Cooking section and had to try it. I was nervous but it was actually really easy to make. If you have never had Persian rice before, you are in for a treat! The cooking method provides for this amazing crispy crust that all your guests will be fighting over. You can prepare the dish ahead of time (even a day before), and pop it in the oven an hour or so before dinner. Hope you try this one!

Sunday Food Prep/Tip: Skillet Lemon Parmesan Chicken w/ Zucchini and Squash
This is a great weeknight meal that comes together quickly and is both flavorful & healthy. I was feeling rather uninspired. I had chicken breasts and zucchini in the refrigerator. I literally googled “chicken and zucchini” and this recipe (linked in comments) popped up!
Some Notes:
-I marinated the chicken in the seasoning mix and some olive oil for a couple of hours (just because I had time).
-I did not use any butter. I used Avocado oil spray for the chicken and olive oil for the veggies
-I added sliced onions to the sauteed zucchini (and no squash)

Sunday Food Prep/Tip: Healthy Banana Splits
This is not my idea…I saw it on Facebook…but I have been having this for breakfast every day this week and loving it so I thought I would share! Who doesn’t love an old-fashioned banana split? Now you can have one for breakfast…and it’s healthy (and just fun to eat)!
Simply split a banana in half lengthwise. Scoop your favorite yogurt into the middle (I use Chobani Nonfat Plain Greek). Add your favorite berries and/or granola as your toppings and drizzle a bit of honey on top as your hot fudge. Voila! A healthy banana split that will keep you satisfied and give you the energy you need to start your day.
