Wanted to share a good article on why honey crystallizes. Remember that all raw honey will crystallize. Most of the honey on the store shelves is heated and filtered so it won't crystallize, but that removes a lot of the beneficial qualities that honey is known for.

No wonder that 75% of all honey that is in the stores isn't considered real. When they bring import honey like this, they remove all pollen so it can't be tested to determine where it comes from.

The seized illicit honey that was abandoned or forfeited totals 660 barrels weighing 203,280 kilograms (448,156 lbs.). The containers’ shipping documents indicated the bulk honey originated in Latvia.
