Chef Brian Volmrich is hosting the second of his Sperryville Summer Supper Series on August 24 at 6:30 pm at Before & After. This family-style supper sources its menu ingredients from Chef Brian's Peak View Gardens Farm in Flint Hill or other area farms. The menu for August 24 is:
FIRST COURSE:
Phyllo wrapped baked Brie with Field Greens and Apple Vinaigrette
Quinoa with Watermelon, Tomatoes, Feta, Balsamic Reduction
Popovers with Honey Butter
MAIN COURSE:
Braised Beef Short Rib Pierogies with melted leeks and
Buttered Beef Jus
DESSERT:
Pecan pie with Bourbon Chantilly
Sweet Potato Semifreddo
