We'll meet a handpicked selection of those people today and hear the stories behind their businesses and process.

So looking forward to our trip to French Canada in only three months! Our welcome dinner is a special old school dining experience at the one and only Restaurant Le Continental... where nothing has changed since 1956! https://www.youtube.com/watch?v=VRIMurxEII4

Thanksgiving is almost here! Grab a couple bags of frozen pearl onions when you do your shopping and add this, our family's favorite Turkey Day recipe, to your table....
GOLDEN CREAMED PEARL ONIONS
2 lbs. frozen pearl onions
2 TB. butter
1 tsp. sugar
3/4 tsp. salt
2/3 cup heavy cream
2/3 cup minced parsley leaves
In a deep skillet large enough to hold the onions in one layer combine the onions, butter, sugar, salt and enough water to cover the onions. Bring the water to a boil and boil the onions until the liquid is almost evaporated. Cook the onions over moderate heat, swirling the skillet, until they turn golden and begin to brown.
Add the cream, bring the liquid to a boil and boil the mixture, stirring occasionally, until the sauce is thickened slightly.
Season the mixture with salt and pepper and stir in the parsley.
*You can also use fresh pearl onions - blanch and peel them, and make sure to add enough water to cook them through before they begin to brown.

Tarpon Springs, Florida, is often referred to as "Gulf Coast Greece," "Little Greece," and "Greektown." In the early 20th century this quaint town on FL's sunny Gulf Coast drew a workforce of immigrant sponge-fishers from Greece, and today it has the highest percentage of Greek residents of any town in the US.
On our PARADISE GOURMET tour, November 13-17, we'll visit Tarpon Springs to check out the atmospheric sponge docks, the kitschy sponge museum, excellent shopping, and of course... the FOOD! With the waves lapping nearby, the platters of saganaki, moussaka, grilled lamb, Greek salad and baklava, and our glasses full of wine - we might as well be in Mykonos for a day!
