Easy Slow Cooker Teriyaki Pulled Chicken Sandwiches | Sweet & Savory Meal Prep Recipe

Ingredients

Chicken

* 2 to 2½ pounds boneless skinless chicken breasts or thighs
* 1 cup teriyaki sauce
* â…“ cup brown sugar
* 3 cloves garlic, minced
* 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
* 1 tablespoon soy sauce
* 1 tablespoon rice vinegar
* 1 teaspoon sesame oil

Optional Thickening Slurry

* 1 tablespoon cornstarch
* 2 tablespoons water

Sandwiches

* 6 sandwich buns (brioche or hamburger buns work great)
* 1½ cups shredded cabbage or coleslaw mix
* 2 green onions, sliced
* 1 tablespoon sesame seeds (optional)

INGREDIENTS

Cottage Cheese Crust (same base)
• 2 cups cottage cheese
• 2 large eggs
• 1 cup oat flour
• ½ cup shredded mozzarella
• ½ tsp garlic powder
• ½ tsp salt
• ¼ tsp black pepper

Caramelized Onions
• 2 large yellow onions, thinly sliced
• 1 tbsp olive oil
• Pinch of salt
• Optional: splash of water to prevent burning

Cook low and slow (15–20 min) until golden and sweet.

Garlic–Herb Sauce (Recommended)
• ½ cup Greek yogurt or blended cottage cheese
• 1 small garlic clove, grated
• 1 tbsp olive oil
• 1 tbsp lemon juice
• 1 tbsp finely chopped basil (or parsley)
• Pinch salt & black pepper

Mix until smooth. Chill 10 minutes if possible.

Toppings
• 1–2 jalapeños, thinly sliced
• Fresh basil, torn (after baking)
• Optional: red pepper flakes or hot honey drizzle
