🥒🌶️ Low-Carb Pickled Celery Snack 🧄✨
Crunchy celery sticks soaked in a tangy, garlicky brine with a hint of spice—perfect for a refreshing low-carb snack.
Prep time: 10 minutes
Cook time: 5 minutes
Total time: 15 minutes (plus chilling)
Yield: 1 quart jar
Ingredients:
* 1 large bunch celery, cut into jar-length sticks
* 1 1/2 cups white vinegar
* 1 1/2 cups water
* 1 tablespoon kosher salt
* 1 teaspoon sugar (optional)
* 2 cloves garlic, smashed
* 1 teaspoon mustard seeds
* 1/2 teaspoon black peppercorns
* 1/2 teaspoon red pepper flakes
* 1/2 teaspoon dill seeds
Instructions:
1. Pack the celery sticks tightly into a clean quart mason jar.
2. Add garlic, mustard seeds, peppercorns, red pepper flakes, and dill seeds.
3. In a small saucepan, combine vinegar, water, salt, and sugar.
4. Heat until the salt dissolves completely.
5. Carefully pour the hot brine over the celery until fully submerged.
6. Let the jar cool to room temperature.
7. Seal and refrigerate for at least 24 hours before eating for best flavor.
Pro Tip:
Add sliced jalapeños or fresh dill sprigs to the jar for extra kick and flavor.
