Keto Sweet & Sour Cabbage Mushroom Filling for Dumplings
Ingredients:
2 cups finely shredded cabbage
1 cup sliced mushrooms
2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup rice vinegar
2 tablespoons soy sauce (or coconut aminos for soy-free)
1 tablespoon erythritol or monk fruit sweetener
1 teaspoon grated ginger
Salt and pepper to taste
2 tablespoons chopped green onions (optional, for garnish)
Sesame seeds for garnish (optional)
Instructions:
Prepare the Vegetables:
In a large skillet, heat olive oil over medium heat.
Add chopped onions and garlic, sauté until they become translucent.
Cook Cabbage and Mushrooms:
Add shredded cabbage and sliced mushrooms to the skillet.
Cook until the vegetables are tender, about 5-7 minutes.

Prepare the Sauce:
In a small bowl, mix rice vinegar, soy sauce (or coconut aminos), sweetener, and grated ginger.
Pour the sauce over the cooked vegetables in the skillet.
Simmer:
Reduce heat to low and let the mixture simmer for an additional 5-7 minutes, allowing the flavors to meld.
Season to Taste:
Season with salt and pepper to taste.
Garnish:
Garnish with chopped green onions and sesame seeds if desired.

Serve:
Allow the filling to cool slightly before using it as a stuffing for keto dumplings or enjoy it as a side dish.

Hello to all AMHS Class of 1973 alumni. Hello also to fellow graduates of AMHS. This is to start conversations regarding a 50th year reunion in 2023.
Tentative dates are for a weekend in October. (Excluding the first weekend).
I live in Fort Myers so need assistance from those who live in Apopa or nearby. Please verify you would like to be on a planning committee. Also, any information from recent reunions will be appreciated.
