This was my first Lumpia!! It was delicious, but there was so much of it!!
1- 16 oz ground pork (I used Swift)
5-6 baby carrots minced
1-celery ribs minced
1/2 vidailia onion minced
6-7 garlic cloves minced
1 large egg
1 tsp sugar
1 Tbsp Soy Sauce
1 Tbsp Oyster Sauce
1 Tbsp Sesame oil
1 Tbsp Ginger Dressing
1 tsp Crazy Salt
1-2 Tbsp Cornstarch
Lumpia wrappers (Spring Roll wrappers, bought at Asian Market) pull out of freezer about 30-min to an hour before.
In a large bowl use your hands with gloves to mix together the pork, carrots, celery, onion, garlic, soy sauce, oyster sauce, sesame oil, ginger dressing, crazy salt and cornstarch. Take a teaspoon of the mixture and cook in the microwave about 30 secs. Taste it and see if it needs anything. Add that and do the same until flavors are right. You can skip this, but you may risk a whole batch being bad, instead of just a few tries to get it right. Up to you.
Lay your thin wrap down there are two ways I’ll explain to you to roll them. There are probably other ways too, but these are the two that I have seen done.
Slanted: this probably is not the proper name, but you will take your wrap and slant the square so that there is a corner on bottom. Then you will add about a tablespoon of the mixture, roll it over once than fold in the edges then roll until you get a small corner that looks like and envelope corner and dab a little egg to seal.
Regular: Lay the wrap like a box, add a tablespoon of the mixture, than fold up, then fold over the sides and roll, at the end add a little egg to seal.
Try each one see which one you prefer.
After rolling make sure to lay they out flat, not on top of each other or they will stick and break open.
Grab a large cooking sheet with a rack and have ready.
Heat up about 2 inches of oil in a saucepan. Heat oil to 325° to 330° . Use a spider spoon, and layer two at time in the spoon and drop, do this twice so 4 are in the pan, turning over slightly so that each side is browned. Pull them out when golden browned, and lay single file on the rack over the cooking sheet. Keep going until done. You can freeze these before cooking as well in a ziplock bag for a later night.

I’m not sure how many it made but a lot. Anyone local, is free to stop by we have plenty left, and they would not taste that good tomorrow. Maybe air-fried?
