Usually not a breakfast girlie but I’m trying to be better! And these prepped egg bites are definitely helping😋
Per cup, there’s one egg, some bacon, and a mix of veggies! I found it’s best to mix each egg + veg one at a time in a separate cup and then pour it into the cupcake/muffin tin. Make sure you grease them well! Bake them at 325 for ~20. Let them cool and store in the fridge or freezer!

Toasting to Tuesday with my fav post workout snack! I love a good pb or ab + j toast. Healthy fats, carbs and a bit of sugar to keep me going + to satisfy the sweet I might be craving.

Cleaning up your pb/abj is so easy and your body with thank you for cutting out the
❌ inflammatory oils ❌
that are usually in nut butters as well as the ❌ corn syrups/chemicals ❌
in fruit spreads!

✨I use GF bread but if you can and do eat gluten a good sourdough, whole grain or ezekiel bread variety is great
✨For the fruit spread I either make my own or use a store bought one with 100% fruit and no added sugars. Sugars only coming from the fruit itself
✨And for the nut butter I steer CLEAR of any brands that have more than one ingredient (unless it’s salt, but I still try to buy salt free) RAW Crunchy AB is my ALL TIME fav!

I was never really an oatmeal kinda gal til I learned how to make it like THIS🤤

Oatmeal for breakfast is a great, warm and cozy meal to keep you full til lunch — as long as you incorporate the right things to keep you full, focused and satisfied.

I cook my GF oats on the stove with water and almond milk. I also add in a tablespoon or so of chia seeds and 1 serving of or protein. Stir vigorously so the oats cook and the chia seeds plump up.
At the same time I like to add fresh or frozen berries to a pot with a bit of water and a squeeze of honey. I let that cook until reduced into a syrup.

To sweeten if need be I add a bit of maple syrup right to the cooked oats, my fav nut better for good fats, and of course some fresh fruIt I have on hand! Perfect for the cooler months coming🤗

When it comes to supporting my thyroid and overall health, if I’m not making it homemade, I’m always looking for store bought brands that leave out all the crap — especially inflammatory oils — and give me all the good stuff. Primal never disappoints!

Took my chicken club wrap craving and turned it into chicken club tacos🙃 (because I couldn’t find any larger GF tortillas at the store) They were amazing! I stretched my rotisserie chicken I bought earlier in the week & prepped everything else while my bacon was in the oven. And of course, the ranch made it!! Quick and easy week day or even weekend lunch

I think it’s funny how as a kid I hated leftovers yet as an adult they’re my fav!! Mainly because it’s quick, easy and a chance to get creative🙂

I had leftover rotisserie chicken, black beans and sautéed veggies so I went with the quickest and easiest thing I could think of — a quesadilla! These are great for the kids too. Add a side of 🥑 and the meal is complete

Almond butter spaghetti squash nooods😍 Another easy plant-based meal to add into the rotation!
Do it!!
Roast the sketti squash at 375-400 for about 45mins to an hour depending on size
Sauce:
2 Tbsp of almond butter, crunchy preferred (from tjoes)
About 1-1.5 tbsp of tamari (sub soy sauce or liquid aminos)
Juice of 1/2 lime
1 tsp sesame oil
Combine and add 1 tbsp of warm water at a time til you reach sauce consistency
Saute chick peas and kale in 1 tsp sesame oil. Add garlic powder, salt and pepper. Saute until chickpeas are slightly crisp. Scrape out most of sketti squash and add to pan. Add about 2 tbsp of your sauce and continue to saute about 1 minute - you dont want the squash to get mushy, just enough sauce to coat noods
Remove from heat and add back to squash shell if ya wanna be fancy. Top with more sauce, cilantro, red pepper flakes and ENJOY🤗 @ Hoboken, New Jersey

I batch cooked quinoa in the beginning of the week for this exact reason! Batch cooking makes week day and night meals so much easier and less stressful to put together. Some other things I like to batch cook or prep are: rice, proteins like chicken or ground beef, roasted veggies, and hard boiled eggs
Cutting and sautéing a few different veggies I had on hand w/ some fajita seasoning then adding the pre cooked quinoa helped this come together in 15 minutes. Healthy does not have to be complicated my friends!

Leeks are in season so cauliflower leek soup it is! Quick, easy and filling for a week night meal😋 pair it with a protein or do what I do and add 2 scoops of collagen peptides - it’s flavorless and dissolves. Allllll of the protein benefits and you wouldn’t have a clue
This soup is also brought to you completely by 🤩
Need:
Trimmed leeks, washed WELL and shredded
1 bag of cauliflower rice
1-2 yellow potatoes, diced
1 carton of veggie broth
dried thyme, 1tsp
garlic powder, 2 tbsp
s+p, to taste
crispy mushrooms and scallions to top
How to:
Sauté leeks until soft. Add cauli rice, garlic and thyme and cook for another 5 minutes. Add potatoes and broth. Simmer until all veggies are soft. Let cool and blend or use an emersion blender in the pot. Once blended add back to pot, cook til heated through, salt and pepper to taste and you’re done! Enjoy💚

First I ordered donut pans off amazon - these were key!
Preheat the oven to 350. Grease your pans with avocado oil then sprinkle your fav seasonings in the pan. Of course I used EBTB! Next mix the wet ingredients. You need 2 eggs, 1/2c of water, 1/4c of apple cider vinegar and 2 tbsp of olive oil. Once combined add the simple mills mix and whisk til combined. Use a spoon to spoon the mixture into the donut pan - be sure to fill only 3/4 of the way bc they will rise! Top with more seasoning and bake for 20ish minutes. For the last minute or so I like to broil to get the top toasty. Enjoy immediately or freeze for the week! 🤗

Took a little trip yesterday to Hackensack to try and it did not disappoint! The restaurants entire concept is so thoughtful which made me even happier, and THE VIBES!! 10/10👏🏼The food is organic, sustainably sourced, creative and my favorite, seasonal. Eating seasonally is so important for our bodies. Most things on the menu are plant-forward and gluten free but they have plenty of options for any and everyone!

Happy danced between every bite💃🏽

Here’s what we got:
✨ Citrus Skinny Margarita - for me of course🙃
✨ Mimosa with fresh squeezed oj
✨ Edamame Dumplings - noteworthy! These were incredible. So fresh and so light & packed with so much flavor in the filling.
✨ Charred Cauliflower -also noteworthy! It was made with harissa tahini, medjool dates, dill, mint, and pistachios. It was the harissa for me! Sooo good - I can’t wait to re-create this😏
✨ Korean Noodle Bowl
✨ Good Earth Kale Cobb Salad + tofu

My idea of breakfast in bed😴
Chunky Monkey Smoothie Bowl:
1/2 frozen banana + 1/2 fresh banana
1 serving of collagen peptides
~1/2c of nut milk
1tbsp MCT oil
1 serving of ground flaxs
A few shakes of pumpkin spice
Add to a blender/bullet/food processor and power on high. I use minimal nut milk so it’s a bit thicker but hack! you can also make it thick by adding frozen veggies (cauliflower or zucchini). Swirl in some raw almond butter and top with cocoa nibs and pumpkin seeds
