Soo good for lunch. Tomatoes, mozzarella pearls, fresh basil and a little balsamic glaze! (I like to add avocado too but mine were not ripe enough yet)
Without the avocado:

65 lbs lost since October. (3 of those months I was not even trying)
If I can do it anyone can. But it takes true motivation and the hardest part - control. I control what I eat - me and me only. Now that I have lost some weight, I just need to gain the motivation to work out and be more active. That is where I am currently struggling but I am setting up that goal and saying it out loud.

Since August I have lost 61 lbs. Most of this weight loss has just been diet alone. But now the scale is not moving the speed I would like it to be. Now I have to get into the habit of working out. Its hard to do when you are so mentally drained after work you don't want to work out. But this is my struggle right now and I AM going to overcome it. The diet part has become easier, (the food journal is really helping me) ....so now my focus needs to be on working out. Starting today..... it's on.. I will let ya know how it goes.

I wanted to share a really delicious and healthy recipe for Whipped Feta. It's low carb and packed with protein!
I personally love it on roasted Brussels sprouts, (sooo gooood) but it's also fantastic as a dip for vegetables or with pita bread.
Here are the ingredients you'll need:
* 8 ounces feta cheese block (not crumbled)
* 1/2 cup full-fat Greek yogurt (cream cheese can be substituted)
* 1 teaspoon lemon zest
* 1 teaspoon lemon juice
* 2 tablespoons extra virgin olive oil
* 1 clove of garlic or 1 teaspoon jarred minced garlic
* Drizzle of honey (or hot honey) in the dip or on top (optional, but it adds a nice touch of sweetness)
Optional toppings you can add include fresh herbs like mint, parsley, fresh dill, red pepper flakes, oregano, or thyme, as well as hot honey, pine nuts, or olives.
To make the whipped feta:
Combine the feta, Greek yogurt, and lemon zest in the bowl of a large food processor fitted with the blade attachment. Blend the mixture, and while the processor is running, slowly drizzle in the olive oil through the top opening until the feta is whipped to a smooth and creamy consistency.
Enjoy!
